Trying to use up items from freezer and pantry, in preparation for canning and preserving season that will begin in just a few short months.

April 2 - 8, 2023
Sunday
: ribeye (from freezer), baked potato, tossed salad
Monday: spaghetti (home-canned sauce from pantry), salad, garlic rolls
Tuesday: sloppy joes (ground beef from freezer; tomato sauce from pantry), roasted potatoes, coleslaw
Wednesday: ham and cheese quiche (diced ham from freezer), toast or english muffin
Thursday: roasteed chicken (from freezer), rice, veggies (pantry or freezer, depending on what I choose to have), salad
Friday: perch, potato wedges, coleslaw
Saturday: BBQ ribs (from freezer) on grill, baked sweet potato, salad or coleslaw

1. General Tso’s chicken, rice and edamame
2. Taking Lori’s suggestion for Ribeye steaks, baked potatoes and green beans (LC2 here)
3. Crispy Shrimp Pasta
4. Pork and Broccoli Stir Fry
5. Gluten Free Cheese Ravioli with Lemon-Garlic Spinach
6. Pizza - frozen from Costco, Gluten Free Sabatasso’s 4 cheese, has an excellent crispy crust (LC2)
7. Scallops and Salad

Saturday~Baking/Easter Prep Day so probably Pizza

The weather is turning here so will be adjusting the menu.
Will be very interested to see what you are all preparing over the Summer months. I am in a bit of a rut when it comes to preparing dinners for the warmer months.

I made the Copy Cat Olive Garden Chicken and Gnocchi Soup tonight that someone shared on the March menu thread. It was really good! I did omit the thyme, as I didn't have any in my spice cabinet and substituted my homemade ricotta gnocchi for the prepackaged kind.

  • Wednesday ~ Leftover stroganoff
  • Thursday ~ Grilled whole chicken
  • Friday ~ Pasta Fagioli with sourdough focaccia bread
  • Saturday ~ Leftover meatloaf
  • Sunday (Easter) ~ TBD

Slow to get to this but this is the menu for the coming week.

Wednesday 5th-sausage rolls and veggies.
Thursday 6th- Home made dinner winner, pasta and veggies.
Friday 7th- Good Friday- Fish, chips and peas, fresh lemon and tartare sauce.
Saturday 8th- Pizza bar.
Sunday 9th- Roast pork, potato, pumpkin veggies and Yorkshire puddings.
Monday 10th- to Mum's for dinner.
Tuesday 11-Chicken breast with asparagus, bacon and hollandaise sauce.

Wednesday: dinner with ladies group / wine tasting and presentation
Thursday: leftovers from Book Club (I'm hosting)
Friday: pizza, salad
Saturday: BBQ ribs (from freezer) on grill, baked sweet potato, salad or coleslaw

Regular season baseball for DGS#1 finished. I imagine they'll go into the district play-offs, but not sure how far they'll make it. Our meals have been either something thrown together after getting home from the ballgames or something from the concession stand. DGS#2's baseball season started last week - two nights a week, at either 5:30 or 7:00.

Monday - Spaghetti (put in crock pot before leaving for work)
Tuesday - Chicken Alfredo, Salad, French Bread (ballgame 5:30)
Wednesday - Hotdogs (Church night)
Thursday - Baked Chicken, Rice, Peas
Friday - Pizza, pick up on way home from work (ballgame 7:00)
Saturday - Chicken and Dumplings
Sunday - Roast, Potatoes, Carrots, Green Beans

: charcuterie (better known as cheese, salami, and crackers while watching a movie)
Monday: fajitas
Tuesday: Italian something (I have Ital sausage to be used up; may be lasagna, or spaghetti with sausage marinara, whatever I decide that morning), salad
Wednesday: tomato celery soup, grilled bacon and brie with fig jam
Thursday: leftovers BBQ pulled pork on hawaiian rolls, baked beans, coleslaw
Friday: pizza, salad
Saturday: NFL Draft watch party, so subs(?), sliders(?), other???? (A high school classmate's grandson is expected to be drafted somewhere in 3rd round or later; Caleb attended a Div. 2 college and won several awards over Div. 1 players and set several key records. He's had a wonderful journey and has ton's of family and community support).

Monday - Cheddar Rice, broccoli, meat casserole
Tuesday - Chedder Brats, potato salad
Wednesday - Turkey feta olive hamburgers
Thursday - Hotdogs, soup

I have kale and spinach for salads with all the yummy toppings.

Turkey, feta, olive hamburger sound excellent.

  • Friday ~ Mississippi pot roast (freeze half for camping trip)
  • Saturday ~ Cheesy Chicken Pasta
  • Sunday (DH's BD) ~ Stromboli

At our MNO - Moms Night Out - last night, one friend had several eggplants to give out. I took two large ones and this weekend ... DS19 and I will be making Eggplant Parm again!!!!!!!!!!!!! YUM :)
