Experimented last night with make ahead breakfast item - makes it alot easier on DH during busy weekday mornings!

Breakfast Burritos:

Cooked Sausage
Cooked Scrambled Egg - made with salt, pepper and dash of onion powder
Shredded Cheese
Soft Tortilla S****s

Line cookie sheet with wax paper. Soften tortilla s****s in microwave for a few seconds. Lay s****s on cookie sheet. On one side of s**** layer egg, meat and cheese. Fold other half of s**** over the top and press down firmly.

Place cookie sheet in freezer for 30 minutes to an hour. Remove from wax paper and store in ziplocks or other freezer container.

To eat, just pop one in the microwave for 1-2 minutes - time may vary depending on your microwave.

DH tried them this morning and was a fan. I could see these also be great with green chiles or diced onion cooked into the scrambled eggs. Maybe even a dash of hot sauce.

You could also do crumbled bacon instead of the sausage.

With eggs so cheap right now, this is a great way to provide DH with low cost, quick breakfast items at a fraction of the price of buying the premade ones from the freezer section at the store.

Now I just need to work on making them healthier!!!
