Re: Appetizer Recipes

This is a favourite of mine, super easy:

Tex-Mex Dip

1st layer: Spread one can refried beans (I use medium spice beans with added peppers)

2nd layer: 3 medium ripe avacados mashed with 1 tablespoon lime juice

3rd layer: spread 1/2 container of sour cream that has been mixed with 1/2 package taco seasoning mix (low salt mix is best)

4th layer: enough shredded sharp cheddar cheese to cover (about 1.5 cups)

5th layer: garnish with chopped green onion tops and diced fresh tomatoes.

Looks best layered in a shallow glass container! (I use an 8" oval dish)
Refrigerate for several hours to blend flavours - with plastic wrap or tight lid.

Serve with tortilla chips (a mixture of yellow, blue and red chips are nice). :snow:

Holiday Brie en Croute (Brie in Pastry)

1/2 package frozen puff pastry, thawed
1 egg
1 tablespoon water
1/2 cup apricot preserves or seedless raspberry jam
1/3 cup dried cranberries, softened
1/4 cup toasted sliced almonds
1 lb (approx) Brie cheese round
crackers

Preheat oven to 400 degrees. Mix egg and water. Unfold pastry sheet on lightly floured board. Roll into 14 inch square. Cut off corners to make a circle. Spread preserves to within one inch of pastry edge. Sprinkle cranberries and almonds over preserves. Top with cheese. Brush edge of pastry with egg mixture. Fold two opposite sides over cheese. Trim remaining two sides to within 2 inches from edge of cheese. Fold these two sides onto the round. Press edges to seal. Place seam side down on baking sheet. Decorate top with pastry scraps, if desired. Brush with egg mixture, bake 20 minutes or until golden. Let stand one hour. Serve with crackers; makes 12 servings.

Pepperoni Bread

Pizza dough
Sliced pepperoni
Mozzarella Cheese
Garlic powder or salt

Roll pizza dough out to large oval shape. Sprinkle thin layer of mozz cheese all around leaving about 1 inch bare around the edges. Place layer of pepperoni, with the sides slighty over lapping each other. Sprinkle another thin layer of mozz cheese, sprinkle a little of garlic podwer/salt, add another layer of pepperoni and then more mozz cheese. Take one of the longer sides and start rolling towards the other side. Once you done you should have a long log. Press ends together and tuck under. Place on cookie sheet. Take a knife and puncture roll through top the bottom. This to allow air to escape from each layer of the roll. Spinkle a little cheese to top and bake for 25-30 mintes. Allow to cool for 10 minutes and then cut into slices and enjoy.
