I ate leftovers at lunch. DH had a tuna sandwich. For supper we had turkey tenderloin re-purposed into fajitas with Spanish rice...very good!
The turkey tenderloins came from Sam's - first time we had bought them, and we'll be buying them again. They are applewood smoked and in a marinade. I cooked them in the oven following the directions. They look small in the package, but cook up huge...four tenderloins in the bag. They were leftover from earlier in the week.

A roasted chicken with mashed potatoes and sliced avocado with Catalina dressing.
We had thanksgiving at my dad's and step moms before driving back home! Yep! My dad loves cooking turkey, sweet potatoes, stuffing, etc any time ... so yum, it felt like thanksgiving in January!
