So, I'll get this month started ... My menu plan for the week went out the window this morning. When I came downstairs, I found that my Easter dinner leftovers were still on the kitchen counter, never made it into the refrigerator. I'd incorporated all those leftovers into my meal plan, and now they're in the trash. Ugh! So, here's my revised menu plan for the week:
April 5 - 11, 2021
Monday -- Western omelet, English muffin (leftover diced ham, onions, peppers from Sunday quiche)
Tuesday -- Burgers on the grill, roasted potatoes, bean salad
Wednesday -- Grilled or baked chicken (depending on weather), green beans, tossed salad
Thursday -- Italian sausage with peppers and onions, Mostaccioli, salad
Friday -- pizza with Italian sausage and green olives
Saturday -- Pasta with spring vegetables (maybe diced ham and peas?)
Sunday -- Open (Supposed to have dinner one night with DD and DSIL; not sure on what date. Will shift that evening's menu to Sunday.)
