I just did my menu plan for the first two weeks of November.

October 31-November 6
Sunday~Garlic Parmesan Pork Chops with Penne in Olive Oil and Garlic
Monday~Chicken Noodle Soup with Grilled Cheese Sandwiches
Tuesday~Tacos
Wednesday~Ham and Pierogies
Thursday~Kielbasa Bake
Friday~Take Out
Saturday~H's birthday....he hasn't decided what he'd like for dinner.

November 7-November 13
Sunday~Pigs in the Blanket
Monday~Spaghetti and Meatballs
Tuesday~Anniversary Chicken and mashed potatoes
Wednesday~Steaks and Potato Skins
Thursday~BBQ Pulled Pork Sandwiches and Macaroni and Cheese
Friday~ White Pizza and Pepperoni Pizza
Saturday~Date NIght

Sunday
--butternut squash soup, cheese biscuits, Waldorf salad with apples (between the Bears game and answering the door for Trick or Treaters, it's gotta be simple)
Monday -- Meatloaf, mashed potatoes, green beans, salad
Tuesday – Spaghetti, salad, garlic bread
Wednesday – sausage stuffed acorn squash, fall salad
Thursday -- fish (of some kind), rice, coleslaw
Friday --pizza, salad
Saturday – BBQ country ribs in crock pot, baked sweet potato, coleslaw, corn muffins
Sunday – lasagna, salad, garlic bread

Monday November 1st: French onion penne, veggies and hot bread
Tuesday November 2nd: Popcorn chicken, potato and corn.
Wednesday November 3rd: Quesadillas with tomato, ham, cheese, onion and avocado.
Thursday November 4th: Swedish meatballs with broccolini and mashed potato
Friday November 5th: Korma chicken curry, naan bread and Orange and pineapple whip.
Saturday November 6th: TBC
Sunday November 7th: Eggs, baked beans and crumpets.

What great sounding menu plans!

Anyone want to share recipes for:
  • Garlic Parmesan Pork Chops with Penne in Olive Oil and Garlic
  • Kielbasa Bake
  • Anniversary Chicken
  • BBQ country ribs in crock pot
  • French onion penne
  • Korma chicken curry
I was under-inspired this morning. When I ask for ideas from DH, although I really appreciate his help and interest, he invariably wants something made with hamburger. That’s okay, of course, up to a point.

November 1 - 7

  • Monday ~ Grilled chicken breasts
  • Tuesday ~ Stromboli
  • Wednesday ~ Egg roll in a bowl (with turkey)
  • Thursday ~ Sausalito sandwiches
  • Friday ~ Shrimp, salad
  • Saturday ~ Pork chops, salad
  • Sunday (DH cooks) ~
Other cooking I want to do this week:
  • Chunky applesauce in slow cooker
  • Caramelized onions in slow cooker
  • Bake bread

BBQ Country Ribs
Country ribs are a cut of pork, cut from the pork shoulder. You can get them boneless or with bone-in (but it's not the full rib bone). Your choice ... they will shrink down during cooking, so take that into account. Add meat to the crock pot. I like to add a splash or two of orange or pineapple juice, probably no more than a 1/4 c., 1/2 c. if your crock is fairly full. Top with your favorite BBQ sauce, and turn on the slow cooker. I tend to let mine cook all day. If I'm home, I'll use my baster once or twice to keep the meat moist. Add more sauce, if desired. In the past, I've sometimes added cored and quartered apples. I like to serve with baked sweet potato and coleslaw as sides.

I will surely be trying the Anniversary Chicken. I'd like to make it for DD's family when we visit around Christmas time. I'm not surre about the kielbasa, althought DH would love it. It would have to be sometime when I feel like my weight is way down.

Yes, Jampss, I love the chunky applesauce. I made it this time with monk fruit replacing the sugar, and it turned out great.

French Onion Penne Pasta.

350g penne pasta
680g chicken sausages or chicken mince
40g X2 satchet dry french onion soup
(reserved 1 cup pasta water)

Cook and drain pasta as per packet instructions. (reserve 1 cup of water to make soup)
Squeeze meat out of sausages and form balls or make meatballs from the chicken mince.
Heat oil in frying pan.
Cook meatballs for 8 minutes or until cooked.
Mix dried soup into the reserved pasta water, add to pan and mix well until thickened.
Stir through the pasta.

Either serve as is or place in oven dish and top with mozerella cheese and bake at 180 degrees until cheese melts.
Also nice served with a dollop of sour cream. We serve this with green beans or brocolli and carrots and some warm bread.

I find that this freezes quite well. If freezing and reheating it tends to be a little drier so maybe add a bit more water when reheating.

Tuesday 11/9 - TBD (DH's BD) He has a hearing aid checkup appointment and we're eating out for lunch for his BD, so may be something easy and light.

Saturday 11/13 - Pork Chops, Scalloped Potatoes, Green Bean Bundles

Full disclosure, November menu plans have been so far off, it's not funny. I typically plan my meals on Sunday morning over breakfast, do my weekly shopping (if needed), and then all hell breaks loose and the plan goes out the window. I enjoy cooking. But cooking for myself is sometimes difficult around this time of year, with the time change and other things that always take their emotional toll. So, with that said, here is the annotated plan for this week.

Nov. 14 - 21
Sunday
-- lasagna, salad, garlic rolls (was slated for last week on Tuesday, but never happened, and I want to use the ricotta and parm before it goes bad)
Monday -- chili mac bake, with leftover pineapple and sausage chili from Saturday (Crock-Pot Crazy Pineapple Chili, https://twohealthykitchens.com/crock-pot-crazy-pineapple-chili/)
Tuesday – BBQ country ribs in crock pot, baked sweet potato, coleslaw, corn muffins (yes, another meal where the meat has been in the freezer for weeks)
Wednesday – roasted chicken breast, veggies, salad, rice
Thursday -- Widows & Widowers dinner out
Friday -- dinner out with girlfriends @ holiday market
Saturday – spaghetti, salad, garlic bread
Sunday – pot roast in crock pot with carrots and potatoes, salad (another carry-over, where the meat's been in the freezer for awhile)

Lori ~ Your meal plans are much more involved than mine are even now, cooking for DH and myself. If I were cooking for myself alone, it would be even more simple or at least more repetative. I might just fix a whole chicken and eat it all week long. LOL

November 15 - 21

  • Monday (travel day) ~ Salmon patties (Costco)
  • Tuesday ~ Joe’s Special
  • Wednesday (lunch with Linda ) ~ Chicken (leftover?), chop salad
