April already????

Menu plan for April 3 - 9

Sunday:
Sloppy Joes, coleslaw, green bean salad, oven roasted red potatoes
Monday: baked pasta, salad, garlic bread
Tuesday: tomato celery soup, grilled cheese (something easy, Board & Brush painting benefit for Isobel Smiles Foundation**)
Wednesday: BBQ pork roast, coleslaw, baked apple, baked sweet potato
Thursday: pulled pork over macaroni and cheese, bean salad
Friday: cheese pizza, salad
Saturday: chicken breast, stuffing, green brussels sprouts, cranberry sauce

Isobel was the daughter of a family friend, born with spina bifida. She passed away several years ago, and this foundation was created to honor her memory. They raise funds to provide families in need with important assistive devices to enable greater mobility for disabled children. When Isobel was just a toddler, this family also adopted another little girl with spina bifida. Alexis is currently in the hospital, suffering from seizures, so prayers are greatly appreciated.

A few things I'm making ... Still working on getting DH to eat more veggies (even if I have to puree them LOL)

Mid Autumn here so meal plan is changing.

Sunday: Soup and toast
Monday: Rissoles, mashed potato, carrots, brocolini, corn and onion gravy.
Tuesday: Fiesta pie and hot bread.
Wednesday: Sausages, mashed potato, mashed pumpkin, mixed vegetables.
Thursday: Slow cooker chicken strogonoff with noodles/mashed potato/rice.
Friday: French onion penne, green beans and warm bread.
Saturday: Meat pies for DH as I am away.

I have been trying some Mediterranean meals for DH’s high cholesterol issue ….. it hasn’t been going over well …. Sigh …. Picky eater. :rolleyes:

April is moving on, this week is cooler and some days are raining.

Sunday: Spring rolls and rice
Monday: Chicken and hollandaise, asparagus and boiled potatoes
Tuesday: Chicken, bacon, lettuce and ranch on brioche buns
Wednesday: Meatpie mashed potato, mashed pumpkin, mixed vegetables.
Thursday: Farmhouse chicken casserole with leeks, peas, celery, carrots. Served with mashed potato
Friday: Make your own pizzas with DD and DSIL
Saturday: Potato, ham and cheese pies.

I prepared my weekly menu on Sunday morning, before mass and Easter brunch with my DD. I planned on stopping on my way home from her place to pick up the few groceries I'd need for the week, but put that off until Monday (late). And then, because of a deal I got, my menu changed. The store had put their store-brand hams on sale, 40% off -- and the spiral ham was already on sale for $0.89#. Imaging getting a 11# ham for under $6!!!! So, while I'll vacuum pack most of the leftovers for the freezer, my menu changed significantly, and I have the bone in the crock pot now, cooking the meat off the bone for a batch of split pea soup.

Monday: had planned on pasta with bacon and peas in a light cream sauce, almost carbonara; didn't happen
Tuesday: ham, scalloped potatoes, green beans, salad
Wednesday: going to make that pasta with ham and peas, salad
Thursday: dinner out with widows group
Friday: pizza white with ham and pineapple, salad
Saturday: wedding reception in Indianapolis

  • Friday (Iris & Sonja) ~ Scalloped potatoes & ham casserole
  • Saturday (Iris’ BD) ~ Fish tacos … or whatever Iris requests/Dessert-Chocolate or Caramel Molten Lava Cakes
