So, I'll get this month started ... My menu plan for the week went out the window this morning. When I came downstairs, I found that my Easter dinner leftovers were still on the kitchen counter, never made it into the refrigerator. I'd incorporated all those leftovers into my meal plan, and now they're in the trash. Ugh! So, here's my revised menu plan for the week:

April 5 - 11, 2021
Monday -- Western omelet, English muffin (leftover diced ham, onions, peppers from Sunday quiche)
Tuesday -- Burgers on the grill, roasted potatoes, bean salad
Wednesday -- Grilled or baked chicken (depending on weather), green beans, tossed salad
Thursday -- Italian sausage with peppers and onions, Mostaccioli, salad
Friday -- pizza with Italian sausage and green olives
Saturday -- Pasta with spring vegetables (maybe diced ham and peas?)
Sunday -- Open (Supposed to have dinner one night with DD and DSIL; not sure on what date. Will shift that evening's menu to Sunday.)

Oh man! Bummer! I have been there ... and done that! It is ... ug!!

This week ... we are eating up stuff from leftovers in frig and the freezer. Nothing fun or exciting. Just want to use up stuff and start fresh next week!!!

I probably should plan more leftovers for this week, too. I do eat leftovers for lunch though and often take some to share for lunch with a friend when we get together (weekly).

  • Monday (at the lake) ~ BBQ ribs; snacks during basketball game
  • Tuesday (at the lake) ~ TBD (hamburgers?)
  • Wednesday (home ... leftovers?) ~ TBD
  • Thursday – Stromboli
  • Friday ~ Salmon, salad
  • Saturday ~ Asian Lettuce Wrap
  • Sunday ~ DH cooks

Monday- Eli's Choice (Birthday)- Subway
Tuesday- DH's Homemade Chicken Tenders w/macaroni and cheese
Wednesday- Whatever night
Thursday- Muffins (DH had to work and DD made dinner- score!)
Friday- Grilled Chicken with veggies in foil
Saturday- Ordered Pizza Hut
Sunday-


DH made the meal plan so i'm not exactly sure what is on it. I'll come back and update.

-- leftover Tortellini Vento from a fav. restaurant; went Friday with my DD (cheese tortellini with prosciutto, peas and mushroom in creamy tomato sauce)
Monday -- roasted chicken with rice mix and salad
Tuesday -- tacos, Spanish rice
Wednesday -- BBQ country ribs in crock pot; baked sweet potato, slaw
Thursday -- salmon packet on the grill, roasted potatoes, salad
Friday -- pizza, salad
Saturday -- burgers on the grill, sliced tomatoes, potato wedges

That Red Macaroni sounds delicious. Watched the video and it's going in my menu rotation!!!!! Thanks for sharing!

Red Macaroni here is called Hamburger Hot Dish, does not sound as good as RM. My uncle called it Swedish Spaghetti. Do not know why but I do not like it. I like all the ingredient.

My husband who is from the south had never had it. After we had moved to WI the neighbors served it to him when he was helping them lay a concrete floor in a dog barn. He came home raving about it.

The red macaroni looks good. We do something similar here but will try it as posted above and see what DH thinks.

  • Saturday ~ leftover Cabbage Patch Stew
  • Sunday ~ TBD (camping travel day)

I was concentrating on the Red Macaroni but just checked out the recipe for the broccoli chicken. I think I will try that tomorrow night!!!

Tried the Chicken and broccoli last night. It was delicious, DH loved it and it will now go onto our regular menu.
