A little late ... It's been cold here, with a little snow, so this week's menu looks a little like the dead of winter, rather than springtime.

April 18 - 24, 2021
Sunday -- leftovers from the weekend with my daughter
Monday -- chicken a'la king over biscuits, salad
Tuesday -- chili, slaw, and corn bread muffins
Wednesday -- spaghetti, salad, garlic bread
Thursday -- fish, oven roasted potatoes, slaw
Friday -- pizza, salad
Saturday -- country ribs in crock pot, slaw, sweet potato

I'm running out of time this morning, but later on I'd like to check out the links.

We're in for a cold snap, too, towards the end of the week, so will be making soup!

April 12-18

• Monday ~ (camping) – Fish Tacos
• Tuesday ~ (back home) – Asian salad with chicken
• Wednesday ~ Soft tacos/taco salad
• Thursday ~ Pork chops; salad
• Friday ~ Salmon; salad
• Saturday ~ Mulligatawny
• Sunday ~ Short Ribs? (DH cooks)

Our meal planning for time at the lake is TBD. We usually eat dinners with neighbors there, so we plan as we go. I will want to take some items for the freezer though.

April 26-May 2

• Monday ~ Hamburger with caramelized onion; salad
• Tuesday ~ leftover short ribs
• Wednesday (lake) ~ Local Myth pizza
• Thursday (lake) ~ BBQ whole chicken
• Friday (lake) ~ Hamburgers (DH's BD)
• Saturday (lake) ~ Sausalito sandwiches; finger salad
• Sunday (lake) ~ Steak; baked potatoes; roasted vegetables

Sunday -- steak, baked potato, salad [Need to use up some freezer items ... that steak has been in there almost too long.]
Monday -- pasta with spring vegetables, salad
Tuesday -- Burgers on the grill, baked beans or grilled potato wedges, cole slaw or sliced tomatoes
Wednesday -- Italian sausage with peppers and onions, garlic toast, salad
Thursday -- grilled chicken, rice, veggie skewers, salad
Friday -- pizza, salad
Saturday -- diner out

So dinner tonight will be a casserole from my childhood, that we probably have all had......macaroni, large can stewed tomatoes, green pepper, onion and ground beef. I think some have called it red macaroni......this and carrot raisin salad bring back wonderful memories for me.

I would love to hear some of your favorites from days gone by........comfort foods that maybe a loved one enjoyed cooking for you.
