This recipe is exactly the kind of thing I need on busy week nights. It is called Potatoes on the Top and it comes courtesey of Pam Spaur!

Ingrediants:

1 lb. ground beef or turkey
1 can green beans
1 can undiluted tomato soup
mashed potatoes
cheese- shredded (optional)


Brown ground beef (or turkey).
Drain a can of green beans and add to browned meat.
Add undiluted can of tomato soup. Mix together. Put in prepared casserole dish.
Cover the top with mashed potatoes.
You can add shredded cheese if you wish.
Put in oven, at 350 degrees until the cheese melts or the tops of the potatoes get a little 'crusty' or dry. Not real dry and crusty. Warm it thru. I don't remember the exact amount of time.

I do like the sound of that recipe too! I'd have to change the tomato soup part because of DH - he hates tomato - but I bet that a 98% FF Cream of Mushroom or Chicken would work just as well.

And instead of putting cheese on top of the mashed potatoes, I could whip some Laughing Cow Garlic and Herb cheese wedges into the potatoes first - to give then lots of flavor without lots of butter.

I have some ground turkey in the freezer I need to use up too! OOOh - now I am undecided as to what to make for dinner tonight. I had a recipe planned but this sounds GOOD!
