Shared the recipe back in 2021. Will add it here, for ease of access. Aldi sells stuffed ones, like a chicken kiev, but when they're gone, they're gone, and this is the closest I've been able to recreate. I have fresh cranberries left over from Thanksgiving, and will use fresh sliced apples. At the very end, I'll top with a slice of brie and let it melt for a couple of minutes. Previous post indicates that the recipe was adapted from CDKitchen.

Crock Pot Apple Cranberry Chicken Breasts

boneless skinless chicken breasts
Layer each with --
diced green onions (or use thinly sliced onion as a substitute)
a sprinkle of dried sweetened cranberries
dried apples, chopped (or substitute fresh sliced or diced apples)
chopped garlic (or a sprinkle of garlic powder)
a teaspoon of brown sugar
a thin slice of butter

Add to the crock: 2 tablespoons water and 1 teaspoon lemon juice. I've also substituted a splash or orange juice or a splash of pineapple juice. I'm sure apple cider would work well, too.

Cook on low for 6-7 hours. I like to serve over a bed of wild rice.

So hot here at the moment so a lot of salads and airfryer meals. I did make a wonderful chili last night.
Tonight will be ham, cheese and tomato croissants with a side salad.

Thanks. This made me think of your Black and Blue Salad. I am putting that on my menu for the week after the 13th. Hopefully I’ll have some leftovers steak from our Christmas.

: stuffed banana peppers from the freezer, salad
Tuesday: spaghetti, salad, garlic toast
Wednesday: at DDs -- thinking of maybe chicken with apples, cranberries, and brie in crock pot, stuffing, tossed salad (I didn't get to the crock pot chicken last week; have all the ingredients and can start it as soon as I get to her place.)
Thursday: at DDs -- taking fixings for making lasagna; she will have fixings for salad, garlic toast
Friday: pizza and salad, after I get back from DD's
Saturday: meatloaf, mashed potatoes, green beans or other vegetable, tossed salad

Sometimes I just get bored I am selective in what I like and once in a while I lose interest in eating. Everything tastes blah. I have to fight through it.

My biggest issue is nothing sounds good. I’ve looked at new recipes and nothing good. Not sure why that is, age maybe.
Me too. And I certainly don't want to cook it!

It is age to an extent probably paired with boredom from cooking the same meals for years.

I am second and thirding the "tired of cooking same, nothing sounds good" thing!!! But I do feel it comes and goes ... hmmm

Last night was our cheddar brats and tonight was the usual salmon patties. I mean, they are good and good for us. Sometimes I have to psych myself up to stir up the patty mixture. And sometimes, I feel like I am creating "cuisine art".
