Thought I'd start up this thread and transfer my week's plan from the January thread.

January 31 – February 6
  • Monday (ski) ~ Salmon; chop salad
  • Tuesday ~ Chile Verde (from freezer)
  • Wednesday ~ Tomato Soup
  • Thursday (travel day) ~ Bar & Grill/Valley, WA
  • Friday (Apres ski) ~ Chicken & Dumplings*
  • Saturday (travel day) ~ Dinner out at Whitefish
  • Sunday (Apres ski) ~ Asian Chicken Wrap Salad*
February 7 – February 13
  • Monday ~ (Apres ski) Cabbage Patch Stew*
  • Tuesday (Apres ski) ~ Tacos*
  • Wednesday (travel day) ~ Country Style Ribs; rice; avocado salad
  • Thursday ~ Leftover chile verde
  • Friday ~ Nothing ... got upset and didn't fix dinner
  • Saturday ~ Salmon; chop salad
  • Sunday (DH cooks) ~ Brisket; salad; green beans or other vegetable
*Frozen dinners brought from home

-- leftover enchilada pot pie and Spanish rice
Tuesday -- fruited chicken over rice, green beans, salad [for Lunar New Year]
Wednesday -- sausage and peppers (in crock pot), spaghetti, salad, garlic toast
Thursday -- Chili, coleslaw, corn bread
Friday -- homemade pizza, salad
Saturday -- beef stew (or something with leftovers????)
Sunday -- polish sausage, sauerkraut, 4-bean salad

2nd - Wednesday - Hamburgers
3rd - Thursday - Homemade Pizza

5th - Saturday - Gumbo with Rice
6th - Sunday - Ritzy Chicken, Green Bean Bundles, Butterbeans

7th - Monday - Deer Steak, Rice, Gravy, Biscuits, Salad

9th - Wednesday - Fellowship supper @ church (will pick up chicken)

Copied this from January

Tuesday 1st February: Grilled chicken with bacon, avocado, lettuce and ranch on brioche buns.
Wednesday 2nd: Pizza, garlic bread and salad
Thursday 3rd: Chicken enchiladas
Friday 4th: DH will be cooking
Saturday 5th: Toasted turkey, avocado and cheese on Turkish bread
Sunday 6th: Pancakes with mixed berries and ice cream.

I pulled out my “menu calendar for a year”. Idid not fill out much for the last 3 months of last year because of my surgery and Dh was cooking. But February was almost done. Now I have my menu done but can change if needed. The star tells me I need to order something gluten free that I might not find in a store or hand make it.A01A166A-D05A-42B7-8612-F6828D821F84.jpeg

2nd week of February, still warm here so light and easy is the way to go.

Monday 7th February:
Buffalo cheese burger casserole with salad and potato gems ( a new recipe for us)
Tuesday 8th: Potato, ham and cheese pasties with salad.
Wednesday 9th: Fish fingers with vegetables
Thursday 10th:
Toad in the hole with vegetables
Friday 11th:
Vegetable frittata with zucchini, brocolli, bacon, cherry tomatoes and cauliflower
Saturday 12th: Crumpets, eggs, bacon and beans.
Sunday 13th: Milk shakes, fresh fruit and ice cream.

I'm going to try to get better at sticking to a meal plan. It's been so hard since we are both working full time.

Feb. 6 - 12th
Sunday- DH's birthday, not sure what he wants yet
Monday- Chili w/PB and honey sandwiches (crackers, cheese, sour cream for chili); Kids eat chicken patties
Tuesday- Tacos
Wednesday- BFD- eggs, bacon, pancakes
Thursday- Potato soup w/grilled cheese
Friday- DH working late, Fend for yourself night/leftovers
Saturday- Drill Meet, Eat Out

Last week's menu saw a couple of glitches -- wasn't feeling too hot one night, so just made a sandwich; fruited chicken made more than I planned and then became a second dinner of sweet and sour chicken. So there's some repeat here, to use up what I have on hand.

Feb. 6 - Feb. 13, 2022
Sunday --
lasagna, salad, garlic bread
Monday -- polish sausage, sauerkraut, 4-bean salad
Tuesday -- lasagna leftovers
Wednesday -- oven roasted chicken, rice, green beans, salad
Thursday -- sausage and peppers (in crock pot), spaghetti, salad, garlic toast
Friday -- homemade pizza, salad
Saturday -- BBQ dinner out with one of my 55+ groups
Sunday -- Chili, coleslaw, corn bread

Tried this last night, it was good. I am not sure it would come under the heading of health food LOL. We did not use as much heat as it called for. Here is the original recipe.

Buffalo Cheeseburger Tater Tot Casserole.

1 tbs olive oil
1/2 onion diced
3 garlic cloves minced
1 lb ground beef
10oz can diced tomatoes with green chilies
3/4 buffalo sauce
2 tbs chili powder
2 cups cheddar cheese grated- divided
28 oz bag tater tots.


Pre heat oven to 375F
Add olive oil to a large oven safe skillet medium heat.
Add the onion, garlic and ground beef, cook for 8-10 minutes until beef is cooked through. ( I added grated zucchini, carrots and some corn)
Drain any grease, add diced tomatoes, buffalo sauce, chili powder and 1 cup of cheese. Stir to combine.
Arrange tater tots in an even layer on top.
Place in oven and bake uncovered for 30 minutes.
Remove from the oven and sprinkle with the remaining cheese.
Bake for another 10 minutes
Remove and serve immediately.

We had this with a side salad. I also think you could do some guacamole and sour cream and salsa as a side.

Added baked beans, too. Maybe that wasn't such a good idea ... sausage, sauerkraut, AND beans???? Adding air freshener to my shopping list. LOL!

Trying to think ... I wish to not have so much white flour pasta. I have gotten GF at Aldi's. I have even tried a soy bean and black bean and lentil noodle. DH doesn't care for rice but loves potatoes. DS doesn't care for potatoes! DS and I would eat "zoodles" but DH wouldn't touch those. :rolleyes:

My brain is tired. Any good ideas guys? Toss those my way. :)

Can you cook DH's pasta first, then drop in your zoodles? They cook more quickly and you could use the same water, I'd think (if you used a basket strainer for his, or pulled his spaghetti out with tongs). If starch from cooking his first would be an issue, maybe cook yours first, and then his? I don't have that sensitivity, so I'm just throwing out a possibility. I've also been seeing a lot of recipes using cauliflower in lieu of rice and mashed potatoes. I don't use a lot of potatoes for mashing and my preference is for baked sweet potatoes over white bakers (though I won't turn a baked potato down, especially if it has lots of toppings).
