to ask about a recipe. I made oatmeal cookies as one of the selections for dinner w/family at my mom's. Let's just say they were oatmeal rocks!!!! Needless to say, they went in the trash - wasted ingredients get expensive. Has been years since I've made oatmeal cookies, and obviously, this was not a success!

If you have a tried-n-true recipe, please share. I like crispy, crunchy cookies, but not rocks (sad face).

I used to have a truly wonderful recipe from the old Betty Crocker cookbook... the raisins were soaked in boiling water. Does anyone know where I can get this recipe?

I love Oatmeal Scotchies...oatmeal with butterscotch chips. Here's that recipe:

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract or grated peel of 1 orange
3 cups quick or old-fashioned oats
1 2/3 cups (11-oz. pkg.) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels

Directions
PREHEAT oven to 375° F.

COMBINE flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.


If I am looking for a quick fix, I use the Betty Crocker Oatmeal cookie mix. They're yummy too and you can add raisins if you'd like.

I have been searching for an oatmeal lace cookie recipe.

These cookies are very thin and they are almost like a molassas texture on the bottom.

Does anyone know what I'm talking about?

Thanks! teachermomof2. Will put this in my recipe stash. Sounds so good. I'm beginning to wonder if the recipe I used called for too long baking.....resulting in rocks!

momof9, I have a BC cookbook that is falling apart....easy to tell I've used it over 40 years!
My boys grew up with it & each now has a copy!! I'll look for the recipe you're hunting. Will be a few days before I can post as I don't have a home computer. With more snow predicted, I'll be 'holed up' for a few days. But I'll look for it.

LOL, momof9....you can love me forever now! Here's the recipe from the BC cookbook. I got the book in 1964 & my mother & MIL both had copies before that. I've said many times BC taught me a lot. Happy baking...

OLD FASHIONED OATMEAL COOKIES

1 c. seedless raisins
1 c. water
3/4 c soft shortening
1-1/2 c. sugar
2 eggs
1 t. vanilla
2-1/2 c GOLD MEDAL flour (of course)
1/2 t. baking powder
1 t. soda
1 t. salt
1 t. cinnamon
1/2 t cloves
2 c. rolled oats
1/2 c chopped nuts

Simmer raisins & water in saucepan over low heat til raisins are plump, 20-30 min. Drain raising liquid into measuring cup. Add water to make 1/2 c.

Heat over to 400 degrees.

Cream shortening, sugar, eggs, vanilla. Stir in raisin liquid. Measure flour by dip,level,pour method or by sifting. Blend flour, baking powder, soda, salt, spices. Stir in. Add oats, nuts, raisins. Drop rounded teaspoons 2 inches apart onto ungreased bakin sheet. Bake 8-10 minutes. Makes 6-7 dozen.

For those who don't know, all BC recipes state Gold Medal flour because BC was "owned" by Gold Medal.
