How long does Gingerbread Cookie dough last??

I'm just wondering since I have some left over which has been in the fridge, with cling wrap around it since about a week before Christmas.

I'd like to make some more cookies using it, but I don't know if I should throw it out and make fresh dough??

What do you think??

In the refrigerator dough only lasts a few days, maybe up to a week, or so i've read. I wouldn't use it, just throw it out. I would make fresh dough to be on the safe side. You sure don't want anyone getting sick!
