I have no ideas yet for January! Go @teachermomof2 !! I think I might like to do your sausage, green bean, tater sheet pan dinner! I'm writing that one down! Do you have a specific recipe for it you like?

I haven't done my actual meal planning for next week yet, but for the January 1 and 2 I'm planning a chicken sandwich that we like and a new recipe to use up the leftover fresh cranberries I still have (Healthy Slow Cooker Cranberry Apple Chicken).

No, I used some seasoned salt instead. I'm sorry that I missed that when I shared it. Sometimes I have used montreal steak seasoning and left out the pepper.

The first week of January will be a hot one, we will go back to work this week after Christmas bread so will be a little tired. Meals will be quick and easy.

January 1st TBD maybe leftovers.
January 2nd Toasted apple sandwiches with ice cream.
January 3rd Sausage sandwiches with onions.
January 4th Butterflied lemon chicken with cubed potatos and vegetables.
January 5th Fish and Chips with salad
January 6th Nachos with chicken, sour cream and salsa.
January 7th French onion penne with hot bread.

Saturday, Jan. 01:
steak on grill, baked potato, salad (tentative. We're expecting snow and I may not be able to get to my grill -- 6" to 10", possibly more, depending on which weather forecaster you believe.)
Sunday: turkey breast, stuffing, cranberry sauce
Monday: turkey a'la king, salad
Tuesday: spaghetti, salad, garlic toast
Wednesday: chicken with apples and cranberries
Thursday - Tuesday, Jan. 11: traveling

Slap Ya Mama® seasoning is a Cajun seasoning mix with salt, red pepper, black pepper, and garlic (per the container I have). You could probably use a regular seasoning salt, but kick it up with some chili powder, cayenne, red pepper flakes, or by adding a little tobasco or other hot sauce.

Suppers have been somewhat tentative this week. With DH home for the holidays, he'll surprise me sometimes, even though I had something planned out in my head. Last night he surprised me with baked fish and roasted potatoes and salad.

Tonight is something I had planned - Beef tips with rice, field peas, salad
Friday - Steak, Baked Potatoes, and Salad
Saturday - Ham, Black-eyed peas, Cabbage, Cornbread
Sunday - Roast, Mashed Potatoes, Green Beans, Corn

The melting pot sounds so yummy right now. It's so fun. My daughter and I went there a few years ago before we went to see Anastasia. It was a really good day!!

I would love to go to The Melting Pot. I use to fondue at home a lot in my younger years. No longer want to do all the prep work or clean up. lol

Monday - On your own!! I had a ham sandwich from leftover picnic ham on Saturday
Tuesday - Pork Loin, Sweet Potatoes, Cornbread Dressing, Green Bean Bundles, Rolls from a new recipe I want to try.
Wednesday - Brown Stew with Cornbread
Thursday - Chicken Spaghetti with Bread Sticks, Salad
Friday - Baked Fish, Baked Potatoes, Slaw
Saturday - Leftover Gumbo with Rice, Crackers, Salad
Sunday - Roast, Mashed Potatoes, Green Beans, Whole Kernal Corn (was on menu for last week, but didn't make it)

Well, this semester DS18 has a 6 pm class on campus! Soooooooooo, it will be a quick dinner and off we go. The stroganoff is a one pot wonder, and the cheeseburger soup is just the thing for cold nights!

Sunday 9th Jan. Scrambled eggs, bacon and crumpets.
Monday 10th. Hamburgers with lettuce, cheese, tomatoes and onions.
Tuesday 11th. TBD
Wednesday 12th. Chicken Kiev with chips and salad.
Thursday 13th. Turkish rolls with ham. lettuce, jalapenos, carrot (Like Subway)and soft drink
Friday 14th. Tray bake with cheese kransky. potato, carrots and cherry tomatoes
Saturday 15th. Back from farm so leftovers/toast/quick. .

DH has been planning the meals since i've been down with my foot and it's hard for me to stand in the kitchen for any extended period of time. He went shopping yesterday and told me what he got items for and I have forgotten already. I'll come back and update.

1/7 Friday- Spaghetti
1/8 Saturday- Banquet
1/9 Sunday- Had a late lunch out, so just snacked
1/10 Monday-
1/11 Tuesday-
1/12 Wednesday-

Next week (1/10-1/17), I'm going to try and repurpose some leftovers I need to use.

Monday - Leftover Roast turned into Stroganoff over Noodles or Potatoes, Green Beans, Rolls or Garlic Knots
Tuesday - Leftover Pork Loin turned into BBQ Pulled Pork on Buns, Potato Chips, Baked Beans
Wednesday - Leftover Chili used with Hot Dogs (was scheduled for last week, but forgot it was fellowship supper at church that night)
Thursday - Leftover Gumbo over Leftover Rice, Crackers

That should help with the overcrowding of the freezer a tiny (very tiny) bit.

I'll see where this leaves us for Friday...not sure what else may be lurking around needing to be used. I know there's Cheesy Chicken Spaghetti, but we just had that this week, and they may not be too keen on having it again this soon.
