We have lots of leftovers this week.
  • Monday ~ Leftover pizza
  • Tuesday ~ Leftover slow cooker cranberry apple chicken
  • Wednesday (ski?) ~ Leftover country style ribs, salad
  • Thursday ~ Shrimp, salad
  • Friday ~ Skinnytaste Crustless Quiche
  • Saturday ~ TBD
  • Sunday (DH cooks) ~ TBD

We will be hamming it up this week.

Monday- Ham, candied yam (if I remember how to make them) and green beans.
Tuesday- Monte Cristo Sandwiches with ham
Wednesday- Take out
Thursday- Crispy Shrimp Pasta with salad
Friday- scalloped potatoes and yes… ham
Saturday-Artichoke French bread
Sunday-Pizza if we do not have it Wednesday or leftovers

birthday dinner for Mom at DSis#4's house (lasagna, salad, garlic bread, etc.)
Monday: chicken a'la king with mixed vegetables over biscuits, salad
Tuesday: meatloaf, mashed potatoes, green beans, salad
Wednesday: chicken with apples and cranberries in crock pot, brown rice, salad
Thursday: Widows group dinner (Looked at the menu. Maybe BLT or turkey club with a side salad instead of fries? Lake perch or shrimp with a side salad? )
Friday: small pizza, salad
Saturday: BBQ ribs in crock pot, sweet potato, coleslaw
Sunday: Swedish pot roast in crock pot, carrots, potatoes, coleslaw

This week, still hot here so quick and easy meals. Lots of salads. Use up the lettuce that cost 3.50 at the supermarket!!!

Sunday 16th: Chocolate croissants with strawberry sauce and icecream
Monday 17th: Steak burgers with lettuce, tomato, onions, cheese and mayo, side of chips
Tuesday 18th: Taco meatballs with savory rice and salad, pineapple whip for dessert
Wednesday 19th: Spiced pork mince in lettuce cups.
Thursday 20th: Sausages, mashed potato and corn cobs.
Friday 21st: Chicken Snitzels with potato bake.
Saturday 22nd: Fish, chips and salad.

I am off to see what Swedish pot roast is made of.
The recipe on Food.com (https://www.food.com/recipe/swedish-pot-roast-92618) is very close to the one I have from my mom's recipe collection. I like to double the spice rub mixture, so the meat is well coated and, depending on the size of the roast, may also increase the vinegar/sugar mix. I typically substitute garlic powder for the cloves and add it to the spice rub. And I've never had bay leaves in my pantry, so they get left out.

Growing up, mom would cook it in the pressure cooker. (I later found out that she often substituted venison for the chuck roast -- and I hate venison. So it's a good way to disguise it, I guess.). I brown the meat as directed in the recipe and then cook it all day in the crock pot. Makes the house smell soooooo good and the meat gets so tender. Sometimes, I'll take some of the crock-pot juices and add a slurry to make gravy; other times, I'll just use the juices as is. It also makes great BBQ sandwiches from the leftovers. Hope you like it!

*freeze leftovers for ski trip

Swedish pot roast in crock pot, carrots, potatoes, coleslaw (thought I had 1/2 chuck roast in freezer, nope; NO beef roasts OF ANY KIND in my regular grocery store, so menu changed) leftover sliced turkey over stuffing, green beans, cranberry sauce
Monday: country ribs in crock pot, sweet potato, coleslaw
Tuesday: mac and cheese with pulled BBQ pork, salad
Wednesday: tomato soup, grilled cheese, assorted pickles
Thursday: salmon, wild rice, coleslaw
Friday: small pizza, salad chicken fajitas, Spanish rice
Saturday: baked mostaccioli, tossed salad, garlic bread chicken enchilada pot pie (https://12tomatoes.com/chicken-enchilada-pot-pie/#recipe), leftover Spanish rice
