On DH's work trip up to Atlanta and back home, he stopped in GA at this yummy meat place and brought home bacon, thin pork chops, thick pork chops, and patty pan sausage. So, all that has been a part of our menu this week as a fun surprise.

Sunday
-- chicken pot pie, roasted brussels sprouts, salad wedge
Monday -- leftover pot pie, salad (will be having lunch out with DM for her birthday; don't know what time I'll get home)
Tuesday -- chicken fajitas with tortillas and sauteed vegetables
Wednesday -- Souper Supper -- chili, corn bread, coleslaw
Thursday -- dinner out with Widows group
Friday -- fish (not sure what kind), oven roasted or baked potato, salad or slaw
Saturday -- leftovers

waffles, frozen berries and ice cream
Monday
: Crumbed chicken, potato salad and coleslaw
Tuesday: Birthday dinner with the kids
Wednesday:
Popcorn chicken, potato, corn cobs and sour cream
Thursday: Pork steaks with vegetables
Friday: Cold meat, cheese, dip and crackers
Saturday
: Dinner out in Melbourne for me, something quick for DH

January 16 – 22
  • Monday ~ Asian chicken (from freezer – re-freeze some for ski trip)
  • Tuesday ~ DH fixed his own as I had done too much snacking to be hungry for dinner (bad habit!)
  • Wednesday (Ski) ~ Après-ski Emory’s Lake house hors d'oeuvres
  • Thursday ~ Leftover ham and beans from Sunday
  • Friday ~ French dip (with Swiss cheese and caramelized onions)
  • Saturday (lunch with Nortons) ~ Leftover chicken; chop salad
  • Sunday (lunch with Nortons?) (or DH cooks) ~ *

I give up, total fail. I'm at least four days behind and as I look at my plan here, I know we didn't eat what was listed for the 11th, 12th, and 13th. Ugh, I need to start February by writing the meals down in my planner, probably after we've eaten dinner so I can remember what we had!

I look at it as a plan, what I intend to cook, and I make my grocery list based on this list. That way, I have no excuse for not eating healthier or for spending $$ for carry-out. I rarely follow my plan 100%. The only plans that fail are those that are not made. Hugs!

Not following your plan is not a total fail. You made a plan and that is half the battle. If you write the meals you eat into a blank calendar by next year you will have a years worth of meals planned. I have most of a year written down. This helps because if it was after a holiday it includes what I did with the leftovers.

Pam ~ No fail! I often go back and edit my meal plan to reflect what we actually ate. Tonight we were supposed to have cabbage patch stew, but we also had some chicken thawed, so I opted to fix the chicken for dinner tonight and went ahead (with help from DH) and fixed the stew which we will eat for dinner tomorrow night. It's always better left over anyway, and it makes a very easy apres ski. dinner. We have been going out for dinner (appetizers, actually) after skiing the past couple of weeks, but this week we decided to cut a few calories.

As you can tell from my list, dinners are being planned around food with leftovers to freeze and take on our ski trip.


January 23 – 29

  • Monday (play day with Linda and Marcia) ~
  • Lunch: Mulligatawny, garlic bread
  • Dinner ~ Me/dinner at Emory’s; DH/leftover ham and beans
  • Tuesday ~ Grilled chicken breasts, chop salad
  • Wednesday (Ski) ~ Cabbage Patch Stew (save some for ski trip)
  • Thursday ~ DH cooked ham with potatoes and scrambled eggs
  • Friday ~ Lunch with Susan at Chuckanut Manor (no dinner)
  • Saturday ~ Leftover chicken breasts, chop salad
  • Sunday (DH cooks) ~ Mississippi pot roast (freeze leftovers)

I'm gonna be at my sister's this weekend and so I am shopping for DH and DS to have the fixings for meatball subs (frozen from Aldi's) with coleslaw and potato salad (Aldi's). They will do a burger out for the other meal. I also have for next week, chicken salad, tacos, hotdog pig in blankets, and grilled cheese. For sides I have salads, corn bread, black bean soup, tomato soup, roasted veggies, and steamed broccoli. Using up the leftovers from the pantry and freezer also. I need to rethink eggs on the weekends for breakfast .... maybe do pancakes with the flax seed "egg" and turkey bacon.
