Sunday (New Year's Day)
-- assorted appetizers, left over from NYE
Monday -- salad, chicken breast, wild rice, green beans
Tuesday -- salad, meatloaf, mashed potatoes, peas & carrots
Wednesday -- Souper Supper -- loaded baked potato soup, 3 bean salad
Thursday -- Spaghetti with meatballs, salad
Friday -- salmon, roasted potato wedges, coleslaw
Saturday -- pizza, salad

Jan - simple stuff/leftovers

1 Crockpot Chicken breast with red taters. Cabbage soup and leftover stuffing/gravy
2 Cheddar Brats, buns, some veggie
3 Chicken in white sauce over mashed taters, mixed veggies
4 No Bean Chili on hotdogs
5 Chicken salad with veggies

We had French Toast this morning and Monday, we will do home fries and eggs.

I got DS19 some port wine cheese ball and crackers with sparkling apple cider for New Year's Eve. It's a tradition snack! :)

Monday - 2 Cheesy Chicken Spaghetti, Corn on the Cob, Stuffed Jalapeno Peppers
Tuesday - 3 Fried Chicken, Rice and Gravy, Peas, Broccoli
Wednesday - 4 Fellowship Supper @ Church I'll take leftover ham and Lima Beans
Thursday - 5 Beef Enchiladas, Mexican Rice, Refried Beans
Friday - 6 Fried Catfish, Fries, Hush Puppies
Saturday - 7 Baked Chicken, Green Beans, Rice

1. Chinese Takeout-Shrimp with pea pods, hold the sauce and Sweet and Sour Sauce on the side
2. Yesterday’s leftovers
3. Leftover Prime Rib stir fried in butter with mashed potatoes along side Caesar Salad
4. MeatLoaf with baked potatoes and roasted asparagus

I love the inspiration I get from everyone's menu's! Sometimes, thinking of what to menu plan, shop, and cook is ... exhausting. This thread gives me joy. :)

Sunday, Jan 1 - Chicken in Garlic-Herb Sauce in the CrockPot, Rice (pulled a triple shift with the media team at church so having something in the CrockPot was so nice!)
Monday, Jan 2 - Leftovers (Ham from Christmas Eve, some baked beans I found in the fridge, chicken from yesterday), Roasted Vegetable Medley
Tuesday, Jan 3 - Flank Steak, French Fries, Gravy
Wednesday, Jan 4 - Salmon, Rice, Leftover Roasted Vegetable Medley
Thursday, Jan 5 - Taco Pasta, Breadsticks
Friday, Jan 6 - Pizza and Buffalo Wings
Saturday, Jan 7 - Spaghetti and Salad, Garlic Breadsticks

Warning: Recipes may look slightly odd for the next couple of weeks as I use up bits and pieces I find in the freezer and cupboards! My goal for 2023 is less eating out, more meal planning, and shopping from the grocery list with no extras from cruising the aisles)

I am stumped for inspiration at the moment, I fond Summer so much harder than Winter menus.
Will sit will the meal plan tomorrow and see what I can come up with.

I find that I like to eat lighter in the summer -- salad plates, fruit with cottage cheese, sandwiches with lots of veggies, tacos or fajitas in a tortilla shell, items that I can cook on the grill ... I tend to go with what I can get from the farmstands and work that into my menu plan. Anything I can cook that won't heat up my kitchen.
