This is for the week of January 5-11.
Time for me to get back to real, scheduled meals.

Breakfasts:
Oatmeal with raisins and walnuts

Lunches:
Ham and Potato chowder (made with ham bone from our Christmas potluck ham)

Dinners:
Salmon with steamed broccoli
Chicken stir fry
Need veggies!!!!!

: apple cranberry chicken in the crock pot, rice, salad, steamed broccoli and cauliflower
Friday: they're having prime rib dinner at the clubhouse, and will likely do that
Saturday: BBQ pork roast (or, possibly leftover prime rib), baked sweet potato, salad
Sunday: meatloaf, mashed potatoes, oven-roasted carrots, salad

It is going to be very hot this week. DH and I will have easy, quick dinners.. Steak sandwiches, salads, fresh fruit etc.
Cannot wait for it to cool down, I do so much better when it is cool.

Wednesday: Open (DD arrives for a few days)
Thursday: dinner out with DD, DBIL and his GF (our late Christmas get together, due to illness; DBIL and his GF were both down with RSV over Christmas)
Friday: Open
Saturday: Open
Sunday: chili, corn bread muffins, and coleslaw

Cream of Wheat

Lunches:
Tamales- green corn and red pork. From freezer from Christmas Eve

Dinners:
Baked BBQ Chicken, veggie side
Turkey Meatloaf
Th- Meeting friend/old cw for dinner
Friday- 60th b-day dinner for cw/friend.

We are continuing with the quick dinners. Last night I had crumbed prawns and DH had frozen fish, cooked in the airfryer and served with salads. Tomorrow will be cooler so I have chili on the menu.

Oooooooo, I loved eating Cream of Wheat as a kid @AnnieClaus :)

We have meatloaf, salmon patties, baked chicken, and tacos on the menu plans this week.

I am going to my sister's this weekend for my niece's baby shower on Sunday ... should be good yummys to eat!

We eat chili often but I have never made corn bread. Do you make it from scratch or from a mix? It is not something that we can buy here.

. I make either a muffin or square pan. I use a mix since I have found one gluten free. I add a can of drained whole corn, onions, jalapeño, bacon and cheese. Either all or just what I have on hand. Put the mix on a hot dog and fry it for a corn dog. When I think of polenta it’s a moist cornbread that I cut and fry in a pan. I like my corn bread a little sweet but some people do not.

Wednesday: tomato celery soup, grilled cheese
Thursday: meatloaf, mashed potatoes, green beans, salad
Friday: grouper bites, roasted potato wedges, coleslaw
Saturday: pizza, salad at the clubhouse grill (Go Bears!)
Sunday: Crazy Crock-Pot pineapple chili, corn bread muffins, and coleslaw

Week of January 19-25:

Breakfasts:
Oatmeal with chopped apple and walnuts.

Lunches:
Sloppy Joes with baby carrots

Dinners:
* Crockpot turkey breast with cranberry and orange juice glaze, mashed potatoes and green beans.
Oooo, stuffing sounds good too.
Last little taste of the holidays and a long weekend seems like the perfect time for it.

* Sirloin steak with salad or veggie.

Jampss and halimer- I do cream of wheat at least once over the winter.
Take a break from oatmeal- which seems to be my winter breakfast of choice.

One small bag baby spinach leaves.
1/2 block of Danish or Greek feta cubed.
Handful of salted cashews
One sweet potato, peeled, cubed, roasted and cooled.
One tin of diced, drained beetroot is also nice. Not sure if you have that there!?
I used an oil based dressing but very little, Italian or French is nice but just a drizzle.

Roast the sweet potato and let it cool then cube it.
Toss all the ingredients into a bowl. If using the beetroot and you are presenting it to guests I leave the feta and cashews out to just about serving time. The beetroot turns them pink. If it is just for us I toss it all together and serve.
You can add some diced cooked chicken and you can add bacon. You can add cranberries. What ever you want. This is a great combination of sweet, crunchy and salty.

I also do another salad that is very similar. Instead of the sweet potato we use a tin of chick peas, I think you may call them garbanzo beans. This is quicker as you don't need to cook the sweet potato. You drain the chickpeas and the beetroot, add to the spinach, feta and cashews. No dressing with this one.

I have a pork roast in the crockpot with a pack of taco seasoning for tacos at some point this week. We got a pizza for tonight if DS's friend comes over to play board games. Also, this week has blackened fish, chili, and spaghetti and meatballs on the menu.

Last night, I made tortillas from flour and Greek yogurt!
