Half way through 2024 . . . Where does the time go? For me, this first week in July is very busy, so menu planning and prep is essential.

June 30 - July 7, 2024
Sunday:
ribeye on the grill, baked potato, salad (need to pick up 5K race/walk packet and prescription for pet meds today or tomorrow)
Monday: fajitas or taco salad (late afternoon meeting with new member of my Widows group)
Tuesday: grilled chicken, salad, grilled veggies (tentative; may be having dinner with DD and DSIL and/or friends)
Wednesday: sausage & peppers in the crock pot, garlic bread (need to pick up potato salad from deli in old neighborhood; 5K walk in the evening)
Thursday: 4th of July BBQ w/ chicken, baked beans, side salads, etc. (fireworks display from the park down the road, visible from across the street, so hosting for a few friends)
Friday: tomato pie, salad
Saturday: leftovers (need to make a run to Michigan)
Sunday: leftovers

I did a big grocery shop but haven't sat down and made a plan yet. Burgers Thursday is all I have so far. I got some fresh asparagus and zucchini that needs to be made early in the week. I'll report back tomorrow.

(30th) Sunday- Pigs in Blankets, mac and cheese
(1st) Monday- Fajitas
(2nd) Tuesday- Meatloaf with mashed potatoes and corn
(3rd) Wednesday- Tacos
(4th) Thursday- Going to mom's for the day- Fish Fry w/burgers and hotdogs and sides
(5th) Friday- BBQ pulled chicken w/pasta salad
(6th) Saturday- Not sure yet
(7th) Sunday- We leave very early morning for our Salem trip

Sigh. Still procrastinating on menu planning. I started a bread dough and it is rising. Older son wants to fry shrimp for dinner, so we'll make that and cheese grits and something green. Probably zucchini because I have more of that than anything.

Do you ever roast your veggies in the oven? Chopped, drizzled with oil, seasoned with seasonings of choice, and stirred together, 400 degrees on a sheetpan in a single layer, 20ish minutes. Great way to use them up and so good!

Yes! That is my main cooking method. LoL I need to see how to do them in the air fryer, though. Florida summers in the kitchen are brutal.

Have you done mixed veggies on the grill? I toss them in olive oil and balsamic vinegar with pepper and garlic powder. I get the disposable grill pans from dollar tree for easy cleanup. Asparagus and any kind of squash is especially good on the grill.
A quick stir fry is also another alternative.

We do veggies in foil quite a bit. We used canned green beans, peas, and corn. You get a square of foil and put a layer of sliced potatoes on the bottom, chop some onion and put on top. Then salt and pepper. Add your veggies. Then you can add more onion if you want (optional). I put more salt and pepper, a couple pieces of butter and then you roll up the sides of the foil to make a packet. I cook in the oven for an hour. You can also cook on the grill, just put in the indirect heat and not over the flame.

A quick stir fry is also another alternative.
Or, skewer your veggies like a shisk-ka-bob for the grill and baste them with a thick marinade/glaze or even BBQ sauce. Yum!!!! I also toss potato halves (if they're the mini potatoes) or wedges in oil, seasoned, and put on a grill pan. I put them off direct heat and let them cook until golden brown, usually about 30-45 minutes.

Romaine, split down the middle and basted with some olive oil, salt and pepper is great on the grill.

Tonight we had jalepeno turkey sausages, broccoli, homemade bread, and whatever leftovers were found in the fridge. LoL It was kind of every man for himself.

Tomorrow I will roast the chicken, make asparagus and probably carrots.

Thursday DH will make burgers and ribs, baked beans, corn on the cob. Kids will make a cake and probably grab a watermelon. In-laws will bring potato salad. There will be enough for lunch and dinner.

Friday I will turn leftover chicken into... something.

I still have a ton of leftovers from the 4th, so will be using them up throughout the week.

July 7 - 14, 2024
Sunday:
leftover cold chicken, potato salad, veggies w/ ranch for dipping
Monday: reheated chicken with BBQ sauce, pasta salad, baked beans
Wednesday: pulled chicken over salad with veggies
Thursday: burgers on the grill, roasted potatoes, veggies, pasta salad
Friday: BBQ chicken pizza, salad
Saturday: steak, baked potato, salad
Sunday: pork roast, baked sweet potato, coleslaw

Last night, we had one of the Bogo pork loins that I had in the freezer, tonight we will have a hamburger patty from the Omaha steak box, and on Tuesday I have some of the Omaha ground beef thawing. Not sure what I will do with it. That is as far as I’ve got. We had been trying to eat out of the freezer (to make room for the delivery) and the pantry using up things prior.

This week I have:
Breakfast:
Ricotta toast: Spread ricotta cheese on toast, topped with canned sliced peaches, sprinkle with cinnamon, pop under broiler for 60-90 seconds. Watch carefully. Drizzle with honey.

Lunch:
Hot dogs with all the fixins ( to include: dill relish, diced tomato, onion), home made potato salad, baby carrots.

Dinners:
Chef salad
chicken breast baked with pesto, sun dried tomatoes, provolone cheese
turkey meat loaf

Chicken schnitzel with corn on the cob and a baby boiled potatoes.

Update:. The schnitzel was great and tomorrow Dh will get a leftover sandwich. DD and I will have it as a salad bowl. I already made the Chick-Fil sauce. As I was cooking decided next time to make Lemon Chicken instead to cut down the calories. I still use it to make Chick-Fil Sandwiches/Bowls the next day. Also trying to make two meals out one time cooking.

Tuesday: leftover sub sandwich, pasta salad, veggies w/ dip
Wednesday: spaghetti, salad, garlic toast (tentative; may be in Michigan)
Thursday: shish-ka-bob, roasted potatoes, salad (tentative; may be in Michigan)
Friday: burgers on the grill, roasted potatoes, cucumber salad
Saturday: steak, baked potato, salad
Sunday: salmon on the grill, rice, coleslaw

This is DN#1's wedding week, so much of this may go straight out the window if I'm helping with anything. It will have to be something minimal, as I'm far from total recovery.

Monday - French Dip Sandwiches (need to pick up rolls)
Tuesday - BLTs (have a lot of fresh tomatoes)
Wednesday - Rotisserie Chicken, Salad, French Bread
Thursday - Spaghetti (think I have sauce in freezer from before surgery)
Friday - Homemade Pizza (Wedding activities so we'll see on this one)
Saturday - Wedding
Sunday - Something in the crockpot - soup, stew, beef tips??
