Breakfasts:
RIcotta toast with peaches

Lunches:
Turkey and provolone sandwiches
Sun chips

Dinnners:
* Ham Steak with side salad or veggie
* Weds- Jimmy's spaghetti and meatballs
* Saturday- 4th of July

Sunday~Graduation Party.

We made a list of meals to have on hand, so we'll eat through those.

Tacos

This was the plan, and how it's been modified so far --

June 29 - July 5, 2026
Monday
: Burgers on the grill, sliced tomatoes, roasted potatoes (planned). I had Mahjong at my BFF-P's house on my schedule for Tuesday, followed by dinner there, was asked to bring baked beans. Oops! I had in on my calendar for Tuesday, not Monday. Glad P sent a reminder! So dinner was BBQ beef sandwiches, coleslaw, a nice pasta salad, and baked beans, followed by banana bread for dessert.
Tuesday: Had Mahjong on my schedule for Tuesday, instead of Monday, so swapped plans. Burgers on the grill, as above, but with leftover baked beans instead of roasted potatoes
Wednesday: Grilled BBQ chicken, veggie skewers, leftover baked beans (planned); still stuffed from lunch, so just had snacks
Thursday: Dinner with DD & DSIL
Friday: flatbread pizza on the grill, side salad
Saturday: steak, baked potato, salad
Sunday: marinated pork chops, steamed broccoli, salad or coleslaw, baked apples

For week of July 5th-12th:

Breakfasts:
Greek yogurt with raspberries, a little bit of granola, drizzle of honey

Lunch:
Greek chicken salads- Greens, chicken, Kalamata olives, tomatoes, cucumber, pepperoncini's, feta cheese, tzatziki dressing.

Dinners:
* Baked ribs, Elote style corn on the cob, cole slaw
* Baked cherry tomatoes, garlic, shrimp over angel hair pasta. Add fresh basil at the end

For week of July 13th-19th:

Breakfasts:
Tropical yogurt bowl: Greek yogurt, pineapple, kiwi, slivered almonds, a sprinkle of coconut,
drizzle of honey

Lunches:
Shrimp lettuce cups with peanut dressing

Dinners:
* Quesadillas 2 ways:
Cheese with salsa and guacamole
Chicken with BBQ sauce and sour cream
* Turkey meatloaf with corn on the cob
Tuesday- Dinner with friend

I'm also going to make a potato and cheese creamy (no chunks) soup for my sil
who had her wisdom teeth out. May keep a small container for myself.

Snacks and desserts:
Cottage cheese, almonds, cherries, watermelon, rice cakes
(Trying to eat more often)
Anyone else have snack ideas?

Pop corn depending on the type is a good snack. You need to watch the portion size.

Here is our meal plan for the cabin next week:
(Everyone is responsible for one breakfast and one dinner)

Breakfasts:
* Egg and cheese breakfast burritos
* Waffles and sausage or bacon (mine)
* Breakfast strata casserole- eggs, spinanch, french bread
* Blueberry Pancakes
* French Toast
* Breakfast out as we head home (we always stop at the same place about an hour into the drive).

Lunches:
* Grab what you want when you are hungry- I grabbed some ramen packs, there will be mac and cheese packs,
leftovers.
We often go out and about and will pick up an appetizer type thing if we are somewhere.
* Picnic lunch on the drive up- everyone brings there own lunch.

Dinners:
* Pick up Pizza on way in
* Sloppy Joes
* White Chicken Chili and cornbread (my dinner)
* Spaghetti Dinner
* Grilled Burgers
* Last night- we will be out that day and go to a favorite spot we like. Back at the cabin we
will pull everything out so someone may have spaghetti, while someone else has a bit of chili.
(Try to limit what gets thrown out)

Others:
Snacks: Chips, crackers, granola bars, chips and salsa (I plan on putting that out on chili night)
S'mores, brownies
My niece usually gets a whole watermelon and cuts it up.

@AnnieClaus do you have a recipe for cornbread that you can share? I have never made it but bought some polenta last week and would like to try it.

HI Katrina- I bought a mix for this cornbread.
Cornbread can be a funny thing. Some people like it sweet- almost like a cake.
I prefer mine not sweet.

I have made it from scratch but it's been awhile.

I believe missjane has some recipes for it!
My theory is you need to trust a true southern cook for good cornbread!
