July-Mid winter for us and heating up for you. Interested to see what's on the menu this week.

Sunday:-- Peri Peri chicken with savory rice
Monday:-- Cordon bleu meatloaf with mashed potato, pumpkin and veggies
Tuesday:-- Chicken, bacon, lettuce and tomato with ranch on rolls and onion rings.
Wednesday:-- Enchiladas with lettuce, carrots, cheese, avocado and sour cream
Thursday:--Chicken breasts with bbq rub, corn cobs, potato and beans
Friday:-- Rissoles with mashed potato and gravy
Saturday:--TBD

-- Independence Day -- veggie tray, burgers & hot dogs, chips & dip (DD is bringing), baked beans, potato salad, mac salad, relish tray w/ lettuce, tomato, and onion, fruit (friend is bringing), cookies or cupcakes (DD is bringing)
Tuesday -- leftovers (grill Italian sausage, if no burgers or dogs left over)
Wednesday -- leftovers
Thursday -- grilled chicken, salad, rice mix
Friday -- soup or mac & cheese (dental appointment, assuming I'll be numb for awhile)
Saturday -- pizza at friend's house
Sunday -- baked cavatappi, salad, garlic bread

1-Salmon with Lemon cream, asparagus and a salad (ended up having Chicken Kabobs, the salmon looked terrible
2-Time to eat leftover from the refrig
3-Vanessa’s Birthday 5 Guys Hamburgers and fries (we were order #2 so it was quick and excellent)
4-Spaghetti with meatballs and Italian sausage with a salad
5-Fried Spam with pineapple, French style green beans
6-Victoria’s
7-Victoria’s for lunch and Dinner at the Sushi place or with door dash
8-Victoria’s for lunch and when we get home will have leftovers from the freezer

We're having family visit, so I need to do meal planning for every breakfast and dinner ... lunch will be individual, sandwiches or leftovers.
Monday (4th of July) ~ Norton’s beach cabin (whatever they serve)
Tuesday (home – family arrives very late) ~ Salmon spread/dip, vegies, crackers/chips
Wednesday (travel to lake with family) –

  • Breakfast (home): Oatmeal
  • Dinner (lake): Local Myth pizza
Thursday ~
  • Breakfast: Avocado toast, fruit
  • Dinner: Grilled chicken breasts; 10-Minute Spicy Moroccan Quinoa Salad (dressing made ahead)
Friday ~
  • Breakfast: Sourdough pancakes, ricotta cheese, lemon, blueberries, syrup, jam, peanut butter?
  • Dinner: Grilled shrimp and vegies; pasta salad; Garlic ricotta bread
Saturday (travel home) ~
  • Breakfast (lake): Tortilla omelets or tortilla eggs, fruit
  • Dinner (home): Matthias’ California sandwiches or salmon burgers; tabouli
Sunday ~
  • Breakfast: Greek Crockpot (or oven-baked) Breakfast Casserole, fruit, toast or bagels
  • Kaffee und Kuchen: Raspberry pie
  • Dinner: Baby back ribs; Corn on the cob; Cuke and onion marinade; Stir fry kit;

4th - Bacon Cheese Hamburgers, Charcuterie tray with fruit crackers cheese, salsa and chips

Not sure in what order the rest will be. I wanted to eat out of the pantry and just got a little go with. I have chili, tacos, chicken casserole ... nothing to exciting. :)

I generally eat leftovers for my lunch during the week & oftentimes on Friday I eat leftovers for dinner instead of cooking something.

Sat/Sun— I made chili in the crockpot yesterday so today will be leftovers. Sooooo …. DH doesn’t eat beans. :rolleyes: I have always hid ‘healthy’ things in foods. Lately, with the price of meat (all food!!:mad:), I have puréed a can of beans (white, chick peas, black - I switch up) and added that along with the pound of ground meat for tacos, spaghetti, chili, etc. He eats it pretty well. I ask him if he choked down dinner ok? And he’s like, “Yep.” LOL;)

Mon - tacos
Tues - fish, taters, peas
Wed - grilled cheese, tomato soup
Thurs - quiche

We are eating up freezer/pantry items this week.

baked cavatappi, salad, garlic bread [if i get back later than expected, maybe just plain spaghetti or mostaccioli]
Monday -- dinner out (oriental) with friends to honor one of our group who is moving away
Tuesday -- monthly dinner out (BBQ) with Widows & Widowers group
Wednesday -- chicken on the grill, grilled veggies, salad
Thursday -- grilled salmon, roasted potatoes, coleslaw
Friday -- soup or mac & cheese (dental follow-up, I'll be numb for awhile)
Saturday -- pizza, salad

Do you use a prepared sauce or do you have a recipe? Back when Vic was home, I started doing themed dinners set around the places he'd visited on port visits and I plan to start them up again. Portugal is next on the list and Peri Peri Chicken is a Portuguese dish.

This one was a pre sauced butterflied chicken found in the meat department of our supermarket. It was very good.

Last week I tried the Kinder's Meatloaf Seasoning. It made the best meatloaf. We were really pleased with the flavor and will definitely make it again.
