Post Memorial Day when I finally did my menu planning, so thought I'd start the June Menu Plans thread, just a day late, but beginning on June 1.

June 1 - 6, 2021
  • Tuesday -- planned for spaghetti, salad, and garlic bread, but opted instead for pan-fried tortillas used as a pizza crust, topped with BBQ sauce, sliced rotisserie chicken (left-over from Memorial Day), grilled onions and peppers, topped with a mix of sharp cheddar and mozzarella
  • Wednesday -- tomato soup and grilled cheese spaghetti, salad and garlic bread
  • Thursday -- sloppy joes, roasted potato wedges, cole slaw
  • Friday -- pizza, salad
  • Saturday -- grilled chicken with veggie skewers, rice mix (at the dock)
  • Sunday -- burgers, bean salad, roasted potatoes (at the dock)

Tuesday: Casserole of chicken, carrots and green beans with mashed potato.
Wednesday: Spaghetti bolognaise, garlic bread. Mini pancakes with mixed berries.
Thursday: Chicken, Ham and Leek pie with broccoli and carrots.
Friday: BBQ dinner at Mum's (DB 40th birthday)
Saturday: Chinese dinner out for DB birthday.
Sunday: Roast pork, potato, sweet potato, peas and corn. Gravy and Yorkshire pudding. Apple pie and cream.

May 31 – June 6

  • Monday ~ Fish tacos
  • Tuesday (travel home) ~ Sausalito sandwiches (put chicken in slow cooker overnight)
  • Wednesday ~ Chicken quesadillas (make chicken soup for camping trip)
  • Thursday ~ Grilled pork chops; salad (make meatloaf for camping trip)
  • Friday ~ PF Chang's for lunch; Coffee House for dinner
  • Saturday ~ Shrimp; salad
  • Sunday ~ (before leaving) TBD (leftovers or something from the freezer?)

Monday: Chicken parcels, onion rings and mixed veggies
Tuesday:Leftovers
Wednesday: Savory mince with pasta, mixed veggies and hot bread
Thursday: Chicken Pot Pie extra carrots and broccoli
Friday: Toasted sandwiches
Saturday: At the farm, possibly hamburgers
Sunday: Pancakes, bacon and maple syrup.

  • Monday -- burgers on the grill, baked beans, mac salad
  • Tuesday -- grilled chicken, roasted vegetable skewers, rice, tossed salad
  • Wednesday -- spaghetti, salad and garlic bread
  • Thursday -- dinner meeting with my widows & widowers group
  • Friday -- pizza, salad
  • Saturday -- steak, baked potato, salad, garlic bread (at the dock)
  • Sunday -- ??? Not sure if DD will be with me or not, and if so, whether we'll still be at the dock, with late DH's brother and his GF, or back home. With my FIL having passed (1986) and then my DH (2014), my BIL is the last in his line and wants to spend Father's Day with DD (his Goddaughter; he has not children) and I; just not sure if it will be Sat. or Sun. Makes it hard to meal plan for the day.

Wednesday: Rissoles with mixed veggies and gravy
Thursday: Chicken, chorizo and bacon pasta.
Friday: Fiesta Pie
Saturday: Baked beans on toast
Sunday: Scrambled eggs and bacon.

I'm going with easy menus for the week. We're hosting a family reunion for DH's family (just brother, sister, their children, SIL of passed DB and her children, along with a couple of close 1st cousins, and our children - about 25-30) on Saturday night. I don't want a lot of cooking and cleaning to do each night. I'm still putting up new curtain rods and curtains, plus just the every day cleaning that will need to be done - dusting, sweeping, mopping, etc.

June 14th - June 20th
Monday: Pork chops, Rice and Gravy, Peas (only "heavy night")
Tuesday: Pam's Pasta Salad
Wednesday: Pancakes and Sausage
Thursday: Omelets, Bacon, and Toast
Friday: Crescent Dogs
Saturday: Family Reunion
Sunday: Hamburgers

Am looking for a good pasta salad to add for when the weather heats up again. Looks like a few of you might have a tried and true recipe.
Can you please share your favourite pasta salads?

Katrina, mine is a hot pasta. A friend of mine from church named Pam gave me the recipe.

1 (1 pound) box Rotini pasta
1 pound link sausage, sliced into bite-sized pieces
1 purple onion, sliced
1 bell pepper, sliced
2 tablespoons - 1/4 cup Italian salad dressing (according to your taste)
Cajun seasoning

Boil pasta according to directions. Drain.
Cook sausage slices, onion, and pepper in small amount of oil.
Toss all together with Italian salad dressing and Cajun seasoning.

Quick and easy!! You can add other vegetables, too, if you like. DH just doesn't like many...but I think carrots, mushrooms, broccoli...whatever....could add variety.

Katrina, mine is just plain old spaghetti noodles with home-canned marinara sauce. I'll sometimes add sliced Italian sausage or meatballs. But that's it == nothing out of the ordinary. I do use this recipe for my macaroni salad, and like it the best of all the mac salad recipes I've tried. Unless I'm taking it to an outing, I will cut the recipe in half (except for the vinegar-sugar mix, and I often leave the mayo the same, as I like it creamier). https://bakeatmidnite.com/deli-style-macaroni-salad/

Katrina, I just use tricolor Rotini noodles (cook them according to package directions). Rinse in cold water. Then I add in cubed cheese of choice, I cut up pepperoni real small and add that in, and put on some Italian dressing to taste. You can also add some finely shredded parmesan cheese.

Pickle Pasta Salad

1/2 lb pasta
1/2 C pickle juice

Mix together 2/3 C Mayo, 1/3 Greek yogurt, 4 T pickle juice, 1/8t cayenne, Salt and pepper

Add 2/3 C shredded cheddar cheese, 3/4 C pickles chopped, 3 T onion, 2T fresh dill, Salt

Mix all together and chill 1 hour.

We love Creamy Italian Pasta Salad too. I use Creamy Italian Dressing instead of regular Italian Dressing, shell pasta, carrot shreds, tomatoes, and cucumbers all blended together with lots of fresh ground black pepper. So good!

using linguine and Italian Dressing.

I also shared the BLT Pasta Salad last week.
BLT Pasta Salad

  • 2-1/2 cups uncooked bow tie pasta
  • 6 cups torn romaine lettuce
  • 1 medium tomato diced
  • 4 bacon strips cooked and crumbled
  • 1/2 cup ranch dressing
  • 1 Tablespoon barbecue sauce
  • 1/4 teaspoon pepper

Instructions​

  • Cook pasta according to package directions. Drain. Then rinse pasta under cold water.
  • In a large bowl, combine the romaine lettuce, tomato, bacon and pasta.
  • Drizzle the ranch dressing and barbecue sauce over the top. Gently toss to coat evenly. Season with pepper. Serve immediately and enjoy!
My family loved it...and they were a bit torn about the lettuce in the pasta salad. I combined everything but the dressing and pepper and chilled it in the fridge until it was time for dinner, then added the dressing and pepper.

I will have to try all of these over the next few weeks, my pasta salads will be on point this Summer.

Love the menus put up here! Thanks for sharing the pasta salad recipes. I use the tri-colored pasta, add a bag of thawed frozen vegetables and a favorite creamy salad dressing, then add some sweet onion and sliced olives. Sometimes I add chopped up artichoke hearts and/or sun dried tomatoes.


June 14 – 2
  • Monday (travel day) ~ Sausalito sandwich for DH; spinach with tomato-basil salad and fresh mozzarella salad for me
  • Tuesday ~ Crab cakes (from Astoria market) with Ginger Lime Sauce (good!); green beans
  • Wednesday ~ Taco salad
  • Thursday ~ Salmon; salad
  • Friday ~ Hamburger
  • Saturday ~ Tuna Ranch salad
  • Sunday (travel day?) ~ Local Myth pizza
