It's going to be a scorcher this week, so the plan is to eat lighter and prep as much as possible in advance. Today, I'm going to get the pasta salad made and in the refrig, chop veggies for the skewers and for lunches and snacking, make a big pitcher of iced tea to have ready, hard boil some eggs, and I'll cook extra chicken on Monday night, for lunch and to have an option to swap out for dinner.

June 12 - June 18, 2022
Sunday --
spaghetti with meatballs, salad ribeye on the grill, baked potato, salad
Monday -- chicken on the grill, vegetable skewers, salad
Tuesday -- cold plate with cottage cheese and fruit, toast or crackers
Wednesday -- BLT, mac salad*
Thursday -- grilled salmon, tomato salad
Friday -- pizza on the grill, tossed salad
Saturday -- Italian sausage in crock pot, with sauce and spaghetti, salad

I do add a little diced onion and chopped celery, and sometimes swap out some red pepper for part of the bell pepper, to give it a little more color.

Greetings!

I'm back on schedule with the meal planning. It went very well with family. All my pre-prep made it quite easy. Now I get to plan meals for my other DD and family. It's a little more complicated with them, because my DD is vegetarian. The "sides" need to include some protein for her. They aren't coming till July, though, so I have a couple more weeks to get ready.

This week ...

June 13 – 19
  • Monday (travel home from camping) ~ Asian chicken; salad; rice
  • Tuesday (family leaves early a.m.) ~ leftovers
  • Wednesday ~ Chicken breasts; chop salad
  • Thursday ~ Salmon; chop salad
  • Friday ~ Hamburger with caramelized onions and mushrooms; salad
  • Saturday ~ TBD (We may be going to a BBQ.)
  • Sunday ~ TBD

Just spent a few minutes looking up a recipe for ”Sun Chili” (found one!) until I noticed the “Thur Spaghetti” which I thought might be a spell check problem. Then my brain woke up. lol

A little additional commentary to go along with the Budget Grocery thread.

Sunday -- Not what I had planned, but went with the Father's Day flow, remembering my late DH on this day and the relation he had with my late Dad. Dinner was a play on a meal my DH and I used to get at a little Greek-owned diner near our favorite locally-owned grocery store-- inexpensive and comforting today. Back then, it was made with a pita, topped with layers of shaved ham and turkey, topped with swiss cheese that was melted under a broiler. It was then topped with a drizzle of thousand island dressing, and served with sides of rice pilaf and coleslaw. No pita, so I used tortillas, and cooked it like a grilled cheese, with thousand for dipping. I made a Texas rice mix in lieu of pilaf (cooked a single serving) and chopped up some cabbage for slaw. Took me back to those days when DH and I were early in our marriage, had just purchased our first house, and had a toddler who shared our dinner. Good memories, a warm heart.
Monday -- chicken on the grill, roasted potatoes, salad [leftover chicken will be used in chicken salad rolled in a tortilla for lunch on Tuesday]
Tuesday -- tacos [leftovers will be used for burritos for lunch on Weds.]
Wednesday -- dinner out with widows group [I'm sure there will be a doggie bag, just not sure what it will be, but will be utilized in some form for lunch.]
Thursday -- Italian sausage, peppers, and onions in crock pot, served over spaghetti, salad, garlic bread [leftovers will become Ital. sausage sandwiches for Friday lunch; I bought a clearance pack of sub rolls which will be used for making garlic toast and as buns for sausage sandwiches.]
Friday -- tomato celery soup, grilled cheese [soup leftovers for Sat. lunch with a sandwich of some sort, either grilled cheese again, or ham and cheese, or PB&J.]
Saturday -- heavy appetizers and adult beverages at Blood, Sweat, and Tears concert with friends (plus 2 warm up bands, being held at the park that's less than 1/2 block away; coolers allowed with food and drink, or available for purchase from their vendors); I'm thinking tortilla roll-ups, fruit skewers, veggies and dip, cheese and sausage. [Will need to attend our annual Association meeting Sunday morning at the marina in Michigan, so any leftovers will be good to have when I get home Sunday later afternoon / early evening.]

It took me a while to figure out what sun chilli was too!!!

The menu changed a little this week. We seem to have quite a few leftovers so tonight will be left over pizza, garlic bread, roast chicken and veggies, got to use it all up.

What was the 'Sun' chili recipe??? Sorry ... I was doing a quick short cut menu writing!!
Turned out to be a regular chili recipe with Thai Sun chilies added. Sounded spicy.

The rest of this week our menu planning will be somehwat day-to-day. We are at the lake, and we usually eat dinner with our next door neighbors, but we plan day-to-day. I'm surre we will have Teriyaki one day. Tonight we are grilling whole chickens. We will grill two of them, so we will each have leftovers.

June 20 - 26
  • Monday ~ Ladies & Gents breakfast; Dinner: leftover grilled chicken; salad
  • Tuesday (travel to lake) ~ J&K Salmon; salad; asparagus
  • Wednesday – Sausalito sandwiches; salad
  • Thursday ~ Grilled whole chicken; corn on the cob
  • Friday ~ Teriyaki; salad
  • Saturday ~ Local Myth pizza take-out
  • Sunday ~ Steak; roasted vegetables

Soooooooooooo .... I have been pureeing can of black beans into the spag sauce with the gr meat ... (hiding extra protein/fiber and stretching meat). I use a lg can of crushed tomatoes with spices. Cheaper than ready made marinara sauce.

Friday~Beer Can Chicken, Mashed Potatoes and Gravy, Stuffing balls, and Carrots
Saturday~Wedding---It was a buffet with Pasta, Green Beans, Haluski, Oven Roasted Potatoes, Halupki (Stuffed Cabbage Rolls), and Stuffed Chicken Breasts along with a salad with berries and poppy seed dressing. Very typical for our area.
Sunday~Spaghetti and Homemade Meatballs
Monday~Chicken Wings, Mac and Cheese and Cornbread
Tuesday~Taco Night
Wednesday~Slow Cooker Short Ribs, Mashed Potatoes and Beans
Thursday~Hot Dogs and Potato Salad
Friday~Pork Loin and Cheesy Potatoes
Saturday~Dance Picnic

It's much easier to plan for a week of meals during the school year. My grands live with my mom, so we sit them down Sunday night when they get back from the other side and pick meals for the week then. Sunday is almost always pancakes or soup and sandwich, or pizza if they eat up at their mom's boyfriend's. There's almost always sliders in there, and lemon chicken, and regularly we have something like meatloaf and tenderloin. The kids are great about veggies. They like peas, spinach, and broccoli. During the summer we try to eat more seasonal foods. This morning we are going by a farm stand to see what is there. Hoping to find some corn on the cob, since everyone loves it.

This fall some time, my daughter and the kids are moving in with the boyfriend, so meals will drastically change. It will just be mostly mom and me, though that may also change as I'm going to a different eating plan. The kids are just up the road, it's literally 2 minutes away, so we will see them regularly.

Last night's supper was sliders, spinach, baked beans, and cold squash and cucumber salad with a bit of olive oil, vinegar, and some spices. It's probably going to be chicken of some sort tonight.
