A little additional commentary to go along with the Budget Grocery thread.
Sunday -- Not what I had planned, but went with the Father's Day flow, remembering my late DH on this day and the relation he had with my late Dad. Dinner was a play on a meal my DH and I used to get at a little Greek-owned diner near our favorite locally-owned grocery store-- inexpensive and comforting today. Back then, it was made with a pita, topped with layers of shaved ham and turkey, topped with swiss cheese that was melted under a broiler. It was then topped with a drizzle of thousand island dressing, and served with sides of rice pilaf and coleslaw. No pita, so I used tortillas, and cooked it like a grilled cheese, with thousand for dipping. I made a Texas rice mix in lieu of pilaf (cooked a single serving) and chopped up some cabbage for slaw. Took me back to those days when DH and I were early in our marriage, had just purchased our first house, and had a toddler who shared our dinner. Good memories, a warm heart.
Monday -- chicken on the grill, roasted potatoes, salad [leftover chicken will be used in chicken salad rolled in a tortilla for lunch on Tuesday]
Tuesday -- tacos [leftovers will be used for burritos for lunch on Weds.]
Wednesday -- dinner out with widows group [I'm sure there will be a doggie bag, just not sure what it will be, but will be utilized in some form for lunch.]
Thursday -- Italian sausage, peppers, and onions in crock pot, served over spaghetti, salad, garlic bread [leftovers will become Ital. sausage sandwiches for Friday lunch; I bought a clearance pack of sub rolls which will be used for making garlic toast and as buns for sausage sandwiches.]
Friday -- tomato celery soup, grilled cheese [soup leftovers for Sat. lunch with a sandwich of some sort, either grilled cheese again, or ham and cheese, or PB&J.]
Saturday -- heavy appetizers and adult beverages at Blood, Sweat, and Tears concert with friends (plus 2 warm up bands, being held at the park that's less than 1/2 block away; coolers allowed with food and drink, or available for purchase from their vendors); I'm thinking tortilla roll-ups, fruit skewers, veggies and dip, cheese and sausage. [Will need to attend our annual Association meeting Sunday morning at the marina in Michigan, so any leftovers will be good to have when I get home Sunday later afternoon / early evening.]
