Since Tuesday is March 1, let's start a new thread for March ...

Feb. 27 - March 5, 2022
Sunday: Chicken a'la King over biscuits, bean salad
Monday: Chilli, corn bread, coleslaw
Tuesday: pork roast (found a 1/2 of one in the freezer), scalloped potatoes, cranberries???
Wednesday: Ash Wednesday, so a day of fasting. Will likely do a smoothie or broth-based soup
Thursday: Mac and cheese, topped with BBQ pulled pork, bean salad
Friday: either salmon or spaghetti
Saturday: pizza, salad

Just your standard deli-style 4-bean salad with green, wax, kidney, and garbanzo beans in a vinegar dressing. Getting tired of lettuce salads, so a good alternative.

Thanks for starting the March thread, Lori! The bean salad does sound good. I have a jar of that in the pantry. I should pull it out and add it to our greens.

February 28 – March 6

  • Tuesday (Mardi Gras – Fat Tuesday) ~ Kaffee und Kuchen (King Cake); leftovers and/or salad for dinner
  • Wednesday ~ Pancakes, eggs, bacon
  • Thursday ~ Leftover pot roast
  • Friday ~ Lunch at friends'; leftovers for dinner
  • Saturday ~ Leftover roast sandwiches
  • Sunday (DH cooks) ~ Clam chowder

We are heading into Autumn, still trying to eat frugally/meal prep and use what we have.

February 28th-March 6th
Monday 28/2/22: Chicken parm with beans and tiny roasted potatoes
Tuesday 1/3/22: Rissoles mashed potato, veggies and gravy
Wednesday 2/3/22: Ham, cheese and tomato croissants
Thursday 3/3/22: Chicken salad with croutons and bacon
Friday 4/3/22: Chorizo, tomato, carrot and potato tray bake.
Saturday 5/3/22: Nachos and wedges, sour cream and salsa
Sunday 6/3/22: Pancakes and mixed berries

Monday: Pork steaks with boiled potato, carrots, peas and pepper cream sauce, poached pears.
Tuesday: Penne pasta with garden tomatoes and garlic bread.
Wednesday: Fish and chips with tartare sauce.
Thursday: Texas meatballs and rice.
Friday: Chicken strogonoff tray bake.
Saturday :Tinned soup and toast
Sunday : Roast Pork, apples, gravy, sweet potato and vegetables.

We just had Chicken Pot Pie Soup with Crust Dippers. My step ma and I were happy with the way it turned out. She found the recipe in a cookbook.

Spring break with grandkids:
Monday: Sheppard's pie for lunch and they stayed for supper so ham-spinach quiche (Anne-E did not like the spinach!)
Tuesday: ham-veggie-pasta casserole. Supper: TBD, don't know if they will have supper here or not
Wednesday: Sausages + potatoes
Thursday: Chicken pot pie
Friday: either hot-dogs or hamburgers

Ahorsesoul: I'd never heard of Shakshuka before. This recipe doesn't look at all like spaghetti to me. The seasonings are different (cumin, paprika, caraway), and it calls for a 12 oz. jar of roasted red peppers, tomatoes, and feta cheese.

Shakshuka was always on the buffet table when we were in Israel. It's eggs in a sort of spicy tomato sauce.

Friday: San choy bao with rice and sweet chili sauce
Saturday :Toasted sandwiches
Sunday : Spring rolls and fried rice.

I made the Shakshuka yesterday. At first I thought it was going to end up tasting like chili without the beans or meat, but after baking the eggs on top, then adding feta cheese and parsley, it was quite different and very good. DH seemed to especially like it which surprised me. I served it with sourdough biscuits.

Today DH is cooking another new to us recipe ... Italian Sloppy Joes (DD reported that this is very good): Crock Pot Italian Sloppy Joe - Skinnytaste

Monday: grilled Reuben sandwiches, with leftover potatoes, carrots, and cabbage
Tuesday: corned beef hash with fried eggs and rye toast
Wednesday: something other than corned beef -- not sure what
Thursday: St. Patrick's dinner with widows group
Friday: salmon, oven roasted potatoes, coleslaw
Saturday: ravioli, salad, garlic bread (unless I go to Iowa to watch DNephew play ball)
