Hard to believe we're already into May!

May 1 - 7, 2022
Sunday:
Pot roast (from freezer), oven-roasted vegetables, salad
Monday: Roasted chicken breast (grilled on the BBQ or oven roasted, depending on the weather), salad, vegetables, rice mix
Tuesday: Spaghetti with sauce, Italian sausage(?), salad, garlic toast
Wednesday: Burgers on the grill, baked beans, coleslaw
Thursday: Cinco de Mayo! Tacos, Spanish rice, refried beans
Friday: Salmon, coleslaw, rice(?), vegetables
Saturday: grilled steak from freezer, baked potato, salad

This may change, as a birthday dinner we had planned for Saturday evening to celebrate a friend's 70th was cancelled, due to bad weather. It will be rescheduled, just not sure if it will be this week or not.

Oooo! Italian sausage sounds yummy!

I have Tuna Casserole, Taco Chicken, and Spaghetti on the menu plans this week. Monday is BBQ out being it's DH's 66th birthday!

Sunday: Bacon and egg sandwiches
Monday: Spaghetti bolognaise
Tuesday: Chorizo and risoni (new to us)
Wednesday: Meat pie with mashed potato and veggies
Thursday: Steak with creamy pepper sauce and veggies
Friday: Chicken pasta curry with peas
Saturday: Toasted ham, cheese and tomato sandwiches.

I just could not get myself motivated last week, don't know why, and my menu went out the window. So there's a lot of repetition this week. Need to get back on my game.

May 8 - 14, 2022
Sunday:
After a big breakfast, just planning appetizers -- BBQ meatballs, cheese and crackers, raw veggies and the like.
Monday: Grilled chicken breast, salad, vegetable skewers, and maybe rice mix
Tuesday: tomato soup, cottage cheese, crackers
Wednesday: Burgers on the grill, baked beans, coleslaw
Thursday: Italian pasta salad (recipe below), tomato focaccia bread (supposed to be near 90, so this can be prepared in advance and will be a nice cold plate after a hot day)
Friday: Open. Going to Michigan with my DD to visit DH's gravesite (8 years on Weds.; DD has a major presentation that day, so we're going on Friday, instead) and to see my Mom for a belated Mother's Day lunch. Not sure about dinner. Will depend on whether or not we make any other stops along the way, how congested I-94 is, etc.
Saturday: steak (from the freezer) on the grill, baked potato, salad

Italian Pasta Salad
1 pkg tri-colored rotini
1 red onion (chopped)
1 red pepper (chopped)
12 oz. mozzarella (diced)
1 stick pepperoni, remove casing and cut into 1/4" pieces
1 stick Italian salami, remove casing and cut into 1/4" slices and quartered again
1 can pitted large black olives
1 jar pepperocini peppers -- mild or hot, depending on your preference
1 16 oz bottle Zesty Italian Dressing

Cook pasta according to package directions (I prefer to do mine a little al dente). Drain and rinse with cold water to cool. Add all chopped ingredients to pasta and mix. Drain olives and pepperocini (remove stems, if desired) and add to pasta mix. Add 1/2 to 3/4 of dressing and mix again. Chill for 2 hours or more. Before serving, add remainder of salad dressing and stir.

** This is my DSis#4's recipe, but can be altered to your taste. It probably serves 16, if not more, especially if serving as a side dish. But it can easily be adjusted to a size to meet your needs. I only make a full box if I'm taking this to a pot-luck where there will be a lot of people. 1/4 recipe will easily last me for 2-3 meals, if not more.

I've added green pepper instead of (or in addition to) red pepper, and I've also added diced asiago or parmesan and cut back on the mozzarella. You could also add chopped celery or other vegetables. I've substituted sliced yellow pepperocini, instead of whole, eliminating the need to pull stems. Easy to make it your own!

HINT: Instead of buying a stick of salami, get it at your deli and ask for slices cut to 1/4" thickness, so then you only have to dice it. For a full recipe, I'll do 2-3 deli slices (maybe 2 hard salami and 1 genoa, or 1 & 1), adjust the quantity to your taste if you're making a smaller amount. If you can't get stick pepperoni, get the packaged pizza pepperoni and cut the rounds into quarters.

My bolognaise is certainly not traditional by any means. I adapted this over the years when the kids were little. It was one thing they would always eat.

500gr ground mince,
garlic, onions any veggie that you want to hide in there.
tinned tomatoes, tomato sauce, cheese.

Saute the onions and when clear add minced garlic, cook for a few minutes.
Add the ground mince and I add, grated zucchini and carrot, broccoli, corn, peas, shredded cabbage, cauliflower. What ever you have that needs using up. (I found this a great way for the kids to get their veggies.)
Simmer until the mince is browned and add a tin of diced tomatoes or fresh if you want. Add a jar of bolognaise sauce (I looked at Walmart on line and Prego seemed to be suitable). Slowly simmer for an hour or so.

In a separate pot boil spaghetti noodles as per the packet directions.

When ready serve noodles, sauce and top with grated parmessan or cheddar. We serve with garlic bread.
I recently tried soaking 1 cup of barley in 3 cups of water over night. I added this towards the end of the cooking process to bulk out the meat and to add some more nutrition. It was quite good and would probably do it again.

Monday: Left over pork and veggies, scone toast, jam and cream.
Tuesday: Chicken in a honey mustard sauce (from a jar)
Wednesday:Chicken and veggie soup
Thursday: Steak with creamy pepper sauce and veggies (from last week)
Friday: Chicken pasta curry with peas
Saturday: Pancakes, bacon and eggs.

Sunday: Buffalo chicken nachos. New to us and it was fabulous. If you google the recipe and "Woolworths" pops up this is the recipe I used.
Monday: Fish, chips and salad
Tuesday: Mince with french onion soup. Also new to us, I was not a fan, DH liked it
Wednesday: Snitzels with cubed potatoes and vegetables.
Thursday: Homemade dinner winner,
Friday: Traybake chicken drumsticks, veggies.
Saturday: Salami, cheese and dried biscuits.

Tuesday: dinner with Ladies group, following home tour
Wednesday: tomato soup, grilled cheese, pickles
Thursday: Birthday dinner for friend (was postponed from a couple of weeks ago, due to severe weather)
Friday: pizza, salad
Saturday: At the race track, watching my SIL race. Will be either something grilled at the pit or concession, followed by a late dinner after the races.

I pulled out an old Menu Mailer from 2009 to kick start my menu planning, It is a Heart Healthy focus.

Sunday-Turkey (which was chicken since we didn’t find turkey breast) and spinach (sautéd in orange juice, very good surprising) and baked sweet potatoes
Monday-Homemade tomato soup with grilled cheese croutons (from bunsinmyoven)
Tuesday-Golf Night for Dh so we will either go out to eat or eat take out
Wednesday-Onion Glazed Pork Chops with baked squash and steamed broccoli
Thursday-Leftovers
Friday-Salmon with herb crust, steamed red potatoes and roasted asparagus
Saturday-Steak and hash browns with a salad (my choice so not so health healthy)

Yum. It all sounds good.

DH got Omaha Steaks ... sooooooooo ... I will have to meal plan around what came in the box. For sure, tonight will be Apple Tartlets for dessert! LOL
