Monday-Pork Salad. Had the pork mixture in the freezer, some leftover Scoops, used the last of the shredded colby and had fresh lettuce and made the dressing without the green chilis but no one complained.
Tuesday-Chicken and mashed potatoes. Dh came home with a roasted chicken from Walmart. I'll be at Mayo Clinic tomorrow so will not be making dinner even if I'm home by then. Will have a big lunch at Victorias.
Wednesday-Fish Sandwiches and homemade coleslaw
Thursday-Pasta-not sure what yet
Friday-Pizza
Saturday-It's time for another Steak and potato night
Sunday-Japanese Rice Bowl from Blue Apron

Today’s menu changed all because of a deli lady. I stopped at the store to pick up some deli meat for lunches. They had just put out cranberry relish so I asked for some. Deli lady was telling me about a new sandwich they were making using the relish. Sliced turkey, Havarti cheese and slather on mayo mixed with cranberry relish. We made it for lunch..excellent. Dinner was Corned Beef Rubens.

ahorsesoul, that sounds amazing. One of my all time favorites is a bagel with cream cheese, turkey, cranberry sauce or relish and sprouts. Most of the time at home I don't use sprouts, but the rest alone is so scrumptious. As I type this I realize my husband did not use his bagels or cream cheese a few weeks ago, so I've got those in the freezer. I might just have to make those later in the week. Sounds soooo good!!!

Diedra, this sounds good, how do you prepare this please?
I chopped the chicken into bite size pieces. The same with the broccoli. Tossed them both with olive oil, sprinkled with salt and pepper and some orange juice. Baked in a hot oven until the broccoli was a little brown and by them the chicken was done. Then toss with a very good fresh parmesan cheese (I was out of parm so I just used shredded Colby).
