Hey guys! I'm thinking of making this today as my dad and stepma are dropping in on their way back from vacay in Hot Springs, AR

Wow, haven't had tuna in awhile, but may need to try that.

This week is going to be crazy, with multiple daytime outings that will involve a mid-day meal. So, most evening meals will be light.

Sept. 11-17, 2022
Sunday -- oven roasted chicken tenders, flavored rice, green beans, salad
Monday - tomato soup, grilled cheese, coleslaw (will have a bigger meal mid-day w/ Book Club)
Tuesday -- leftover tomato soup, salad (will have lunch out with group, following a trip to a Christmas decor warehouse sale)
Wednesday -- pork chops, baked sweet potato, baked apple, green beans
Thursday -- leftovers from Weds. dinner or soup & salad (luncheon mid-day following my friend's Memorial service)
Friday -- dinner in Mich. w/ DD and DBIL and his GF to celebrate all of our birthdays
Saturday -- pizza, salad (tentative; may have dinner with DD; it's her anniversary and her DH will be away this week)

@Lori K I am gonna do this recipe with canned salmon actually this time. For DS19 ... I will take the bones out. LOL He doesn't like the texture.

Will have Dh take stepmother a few meals. She says her place is short staffed so will not be bringing dinners to their rooms. They will have to go downstairs to eat. She hates to do that.

Greetings!

Tuna isn't on our menu plan very often. Good reminder to consider it. The recipe looks good.

September 12 – 18
  • Monday ~ Sausage and eggs
  • Tuesday ~ Cabbage patch stew (freeze leftovers for camping trip)
  • Wednesday ~ Lemon-Garlic-Vegetable soup (new recipe to try)
  • Thursday ~ Spaghetti casserole from freezer
  • Friday ~ Grilled chicken breasts (fix extra to freeze for camping trip); chop salad
  • Saturday ~ Salmon; chop salad
  • Sunday (DH cooks) ~ TBD

Monday - pork chop, stuffing, applesauce, vegetables, coleslaw
Tuesday -- spaghetti, meatballs, salad, garlic bread (will do meatballs and sauce in crock pot; have a 5:30 vet appt.)
Wednesday -- leftover spaghetti (have luncheon meeting, so will have leftovers, if needed)
Thursday -- meatloaf, mashed potatoes, green beans, salad
Friday -- pizza, salad
Saturday -- chicken a la king or chicken pot pie, salad

Well, I bought easy convenient food for this week for DH and DS as I thought I would be gone visiting my niece in SC. Thanks to Hurricane Ian, my sister and I are not going.

Last night was the frozen popcorn shrimp and macaroni and cheese with a bagged salad. Yummy.

On the Sunday, Sept. 25th thread in Chit Chat, several members commented about struggling with menu planning. Thought I'd post this thought here, rather than on a daily thread.

I'm a visual learner, for sure, and it shows in my menu planning. I've found that I get the most from my menus by using a planning sheet of some sort. A year or so back, my DD gave me a menu planer book that includes nothing but menu planning pages on one side and a spot for a grocery list on the facing page (kind of like this one, https://www.amazon.com/Meal-Planner-Journal-Calendar-Planning/dp/1974561798). I love it and use it often, but not consistently, because it doesn't sit out on my counter. In the past, I've used some of the magnetic planner tablets, and had my menu attached to the refrigerator, readily visible. I love it, but with a stainless steel refrig, I don't want to chance scratches, and there's no place to stash old menus for reference. I've also used numerous menu-planner templates downloaded and printed from the web, hole-punched, and put in a slim notebook -- probably the most used method, but I have to remember to print out a stack of pages to have ready at hand. And I have simply used a spiral notebook. But having something "pretty" to look at when I'm in the kitchen certainly helps.

Another thing that works for me is to use different colored ink for each meal type. I tend to use a bright pink for Breakfast, lime green or a bright blue for Lunch, and purple for Dinner, adding interest to my pages and making meals quickly identifiable.

My planning order is Breakfasts first, Dinners second, and Lunches last, so I can work anticipated leftovers into my menu plan.
