A little late with Sept Menus but rest assured we have been eating.

Rest of this week
Friday-Ribs from the freezer, frozen corn on the cob and potato skins
Saturday- Prime Rib, French Fries and Onion Rings with green beans

Next Week: Sept 20 - 26
Sunday-Katrina's French Toast Bake
Monday-Brats and Potato Salad (I'll be home late)
Tuesday-Spaghetti and Meatballs
Wednesday-Leftovers (I'll be gone over night so Dh will be cooking)
Thursday-Delivery Pizza (I'll be home late so I will not be cooking)
Friday-
Saturday-

Sept. 13th - Sept. 19th menu:
Sunday: Baked ziti and green beans
Monday: Potato, Kale and Sausage soup
Tuesday: Beef Stroganoff
Wednesday: Cranberry Chicken (Crock Pot)
Thursday: BLT sandwiches
Friday: Pepperoni and Cheese Crescent Rolls
Saturday: Leftovers

Sept. 20th - Sept. 26th menu:
Sunday: Chicken Salad Sandwiches
Monday: Broccoli soup
Tuesday: Meatloaf with mashed cauliflower
Wednesday: Chicken Reuben Sandwiches (Crock Pot)
Thursday: Pizza
Friday: Fish Sticks with salad
Saturday: Leftovers

Mary, can you share recipes for the Cranberry Chicken and the Reuben Sandwiches please. I am trying to get a crockpot binder going so that I can make meals throughout the Summer that don't heat the kitchen.

Our menu is not that interesting ... well, yes and no ...

So, we have been getting a meal box kit that we LOVE!! And those are very interesting and very tasty. It's a local company using local farmers. So, those three nights, DS17 and I are making the recipes from the cards and oh my!!! It's like restaurant quality yummy stuff! Otherwise, I just fill in the rest of the week with easy-peasy meals.

Friday's are Pizza from Aldi's deli
Saturday's are Aldi's frozen bacon and cheddar burgers on the grill with a side or two that DH makes.
Sunday I make different stuff ... this week in DH's mom's Pizza Casserole (written in her handwriting on an index card!!)
Monday's are taco night and all the fixin's
Tues - Thurs is the Chef Ami meal kits ... this coming week will be ...
Chicken Enchilada Soup with Fresh Cilantro & Homemade Tortilla Crisps,
Crispy Skin Salmon with Creamy Garlic Parmesan Brussels Sprouts & Bacon,
Vodka Sauce Penne with Sweet Italian Sausage & Spinach

Yes, I'll get them out hopefully tonight or tomorrow at the latest. I'm heading out in just a bit and don't have the time right now. :)

Chicken Reuben (Crock Pot) I got this recipe when there use to be a once a month cooking yahoo email list. This was about the time that FlyLady was just starting out with her yahoo email group.

Ingredients
32 oz jar of sauerkraut, rinsed and drained
1 cup Russian dressing, divided
6 boneless chicken breast halves, without skin
1tablespoon prepared mustard
1 cup shredded Swiss cheese

Directions

  • Layer half the sauerkraut in the pot. Pour 1/3 cup of the dressing over it.
  • Place 3 chicken breasts on top and spread the mustard over the chicken. Top with the remaining sauerkraut and chicken breasts.
  • Pour another 1/3 cup dressing over the casserole. Reserve the rest of the dressing for serving later.
  • Cover and cook on the low heat setting about 4 hours, or until the chicken is cooked through. Sprinkle Swiss cheese over it and serve with reserved Russian dressing.
Notes on the Chicken Reuben:
  • I found that we couldn’t taste any of the dressing or melted cheese when the recipe was done. We would add even more dressing and cheese just as we were eating it.
  • Now I prepare the chicken and sauerkraut in the crock pot without the Russian dressing or the Swiss cheese.
  • When the chicken is done, I shred the chicken.
  • We put the chicken and sauerkraut on toasted bread or rolls. The Russian dressing and the Swiss cheese are served on the side for us to individually add. We can taste the dressing and the cheese when we serve the meal this way.

Notes on the Cranberry Orange Chicken:

  • I use the juice and pulp of 2 oranges in place of the orange juice.
  • I do not add the honey or the brown sugar. I feel it is sweet enough with the orange juice and barbecue sauce.
  • To make a thicker sauce, I would remove the sauce from the crock pot and pour into a pot on the stove and then add the cornstarch.

DH cooks on Sundays (sometimes), and I suggested he try this recipe. We both liked it and it will become a repeater at our house! Makes a lot for just the two of us, so I'll have to see how it freezes. Thank you for sharing!
