I'm not doing well for menu plans this week but thought I'd at least start the September thread ...

September 5-11
  • Sunday ~ Leftover chicken and salad
  • Monday ~ Too much snacking while watching tennis so didn't make dinner.
  • Tuesday ~ Cabbage Patch Stew (with ground turkey ... trying to use less red meat)
  • Wednesday ~ Sausalito sandwiches, corn on the cob (so good this time of year)
  • Thursday ~ Shrimp and salad
  • Friday (travel day) - Local Myth Pizza
  • Saturday ~ Chelan burgers

Thanks for the reminder! I jotted mine down, but not sure how closely I'll follow it this week. Things keep getting in the way ...

Monday -- leftover Italian pasta salad from the dock party (it has salami, pepperoni, and cheese cubes in it, so there is some protein)
Tuesday -- grilled chicken, veggie skewers (storm blew in, so it wound up being baked, and it did corn on the cob, instead of skewers)
Wednesday -- Italian sausage in the crock pot, with peppers and onions, pasta salad
Thursday -- group get-together
Friday -- pizza, salad
Saturday -- (open)
Sunday -- (open)

Monday-Taco bowls but the place had a sign on the door closed so we hit up another place. I had Hawaii Tacos --pork and mango. Probably the best taco I have ever had that wasn't beef.
Tuesday- BBQ ribs (another best I have ever made in my life), pea salad, the last of our tomatoes and cucumbers. (took some to stepmom)
Wednesday- Ham, sweet potatoes and coleslaw (taking some to stepmom)
Thursday-I just ate lunch gluten free General Tso chicken from Aldi's frozen food dest-very good so nothing comes to mind for menus right now. lol

Would you share your recipe. This sounds good.

Crock Pot Apple Cranberry Chicken Breasts

boneless skinless chicken breasts
Layer each with --
diced green onions (or use thinly sliced onion as a substitute)
a sprinkle of dried sweetened cranberries
dried apples, chopped (or substitute fresh sliced or diced apples)
chopped garlic (or a sprinkle of garlic powder)
a teaspoon of brown sugar
a thin slice of butter

Add to the crock: 2 tablespoons water and 1 teaspoon lemon juice. I've also substituted a splash or orange juice or a splash of pineapple juice. I'm sure apple cider would work well, too.

Cook on low for 6-7 hours. I like to serve over a bed of wild rice.

Some of the ingredients are not regular staples in my house, so I substitute what I have on hand. I'm a single person household and a bunch of green onions would be all slime before I used them all. Enjoy!

I struggle too which is why I love threads like this. I get many ideas to freshen up my menu planning.

missjane ~ It sounds like you need to change things up with some simpler options till you get your cooking mo-jo back. I like to use my slow cooker so I can start dinner in the morning (when my energy level is high) and have it all ready to eat at dinner time (when I'm least likely to want to cook). The instant pot doesn't do this for me.

I like this time of year when the weather gets cooler and we can bring out our soup and other fall type recipes!

I'm finding that when I do this type of meal planning, I can look back and see what we were eating at this time last year. It often reminds me of some recipes that I might have forgotten about.

I watched a video last week that helped with ideas for menu planning.
1 - Themed nights (chicken, pasta, mexican, pizza, etc....)
2- 1 night for crockpot
3 - 1 night that is always the 'same'... it could be pasta (just change the sauce), or burger night... that 's an easy night

With the change of seasons, I'm having a hard time with meal planning. I want to make ALL my fall recipe favorites in one week plus I'm finding new recipes I want to try! Too much to choose from! LOL Add to that, we are still going to the lake. I don't really cook those types of meals at the lake.

You'll see we are trying to eat some things up from the freezer, too.

September 19 – 25

  • Sunday ~
    • Breakfast: Egg dish from freezer
    • Dinner: (DH cooks) Ham and Beans from freezer, cornbread
  • Monday ~ The fair/leftover ham and beans if we are hungry when we get home
  • Tuesday ~ Grilled whole chicken
  • Wednesday (travel day) ~ Local Myth Pizza
  • Thursday ~ (our anniversary)
    • Breakfast at Blueberry Hills
    • Steak, Easy Lemon Ricotta Pasta & Spinach (new recipe to try)
  • Friday ~ Chicken, chop salad
  • Saturday ~ TBD
