I've pulled out a sample menu from Saving dinner by Leanne Ely for this coming week since I was at a stand still with menu planning.
Sunday-Grilled Chicken with Avocado Tzatziki (will depend on if the avocado is ripe), green beans and red potatoes
Monday-Grilled Thai Steak with steamed broccoli and brown rice
Tuesday-Spicy Lime Grill Fish with Corn Salsa and a spinach salad
Wednesday-Pork Gyros with Tomato Yogurt Sauce (with no tomato for me and DD) and sweet potato fries.
Thursday- Spanish Chicken (seem to be chicken in the slow cooker with OJ, spices, honey and olives) with a mixed green salad
Friday-TBA update: Lisa’s Barbecue Ham Sandwiches and Sweet Potato Salad
