For my hairdresser and mail lady--I have did gift cards to the Greenhouse, Ross, Bath & Body. I always give them the ornament that I make for the year, seasoning salt, lotion and vanilla (I don't do vanilla every year) along with gift. Have made them items before. Candles at times.
It varies what I give. Usually, I only have the opportunity to give to the mail lady. Last year, I gave her a beautiful throw blanket and a magazine subscription. This year, I'm giving her a gift card to a fast-food restaurant near us so she can stop for lunch. I have also given baked goods.
I like the idea of giving an ornament. I think I will add that this year.
I usually bring my hairdresser a loaf of homemade bread (using a family recipe that's been handed down through the generations) when I see her for my last appointment of the year. I'll also double her tip for that appointment. My mail is delivered to a bank of boxes and the mail delivery driver changes all the time and, while I'd like to tip, I don't because I never know who is handling my route (and sometimes I get more mis-delivered mail than my own). Same with trash collection.
Letter carrier gets Kirkland cookies. Almost everyone else gets home made baked goods or chocolate dipped oreos. Cleaning lady gets double a weeks pay and oreos for her kids. We also try to give her the $ early so she can use it for Christmas prep if she needs it.
This year we have a regular garbage man so will like to gift him something. I am thinking cold drinks that he can have in the truck.
I would like to gift something little to the ladies that run Knit and Natter at the library, they are very good to us.
When we had our regular garbage guys we would make a cookie tray and I gave hand wipes. They loved it. Their mom said they always looked forward to holidays for that.
I remember back in the day everyone in our area put a case of beer in the trash cans on Christmas Week. It always made the evening news cuz they always made such a big haul!! Don't hear of that as much anymore where I am now.
For our service workers it will be some sort of Christmas treat and double the tip. It has varied over the years depending on who the service workers are in our lives.

That's a great idea for "hiding" the Christmas gifts from people trolling the neighborhoods looking for the trash guys Christmas gifts. We had that happen a few years ago.
I usually gift them with hot chocolate packets and Pepperidge Farm brand cookies. The gift bags get placed in a plastic grocery bag and then tied to the garbage can and recyling can handles. Taped to the bag is a big bow and a card addressed to the crews. You can't mistake it for trash.
