Shannon's mom's fruit salad sounds like the ones I remember from my childhood so I was looking at recipes in some of my old church recipe books. This one my Aunt Erna use to make:
White Salad
2 cups vermicelli spaghetti
8 apples peeled and cubed
1 lg can pineapple, cubed and drained (it didn't come in anything but rings then)
1 pint whipping cream, whipped
Dressing
4 whole eggs, well beaten
1 c powdered sugar
1/2 cu lemon juice
rind of one lemon
Cook spaghetti as per instruction on package. Cook eggs, powdered sugar, lemon rind and lemon juice until thick. When cool, mix with fruit and spaghetti. Add whipped cream. Place on lettuce leaf. Serves 16.
