Greetings!

What's cooking at your house today?

We're having the spaghetti and meatballs we were supposed to have yesterday tonight. It will be yummy and comforting on this COLD day.

Sadly, nothing. I have nothing planned, no groceries and no intention of getting any. I'm really on a kick to try to get as much food out of my apartment as possible BEFORE I have to move it to fiance's in a couple of weeks.

Tonight will be 'tourtière'. Mom made one for me and DH.... left it to unfreeze instead of putting it in freezer... so we'll be eating that with gravy (it's a pie with meat & potatoes).

We're having creamed chicken over egg noodles, that is if we aren't due to pick up DS at dinner time.

White Chicken Chili!!! My dh who thinks green peppers are too hot will eat this with green chilies so don't think it's spicy hot (can be if wanted). It's fast and easy. A good way to use up leftover chicken, turkey or ham. Pioneer Woman posted a recipe on her site today, that is cooked from scratch. I'm lazy, I use canned beans and a roasted chicken from Wal-Mart. lol

Ingredients:
1 lb great northern beans (dry) or canned
4 cups chopped cooked chicken breast ( I used 2 lbs)
1 T Olive Oil
2 Medium onions, chopped
4 cloves garlic, minced
2 4 oz. can chopped mild green chilies
2 tsp ground cumin
1 1/2 tsp dried oregano
1/4 tsp cayenne pepper
6 cups chicken stock/canned broth
3 cups grated Monterey jack cheese

Soak beans overnight in water in fridge
Cook chicken and put in crock pot or large stock pot
Add beans to chicken
In sauté pan, heat olive oil
Add onions, chopped garlic, and green chilies. Sauté 2 minutes
Add cumin, oregano, and cayenne pepper. Sauté 2 more minutes
Add to beans and chicken
Add chicken broth
In crock pot or on stove, cook until beans are soft (for us, 2 hours on the stove was perfect)
Top with cheese and sour cream

I am in the same boat as Kim loves Snow! I don't feel up to venturing out but i will probably send the kids to the corner store for some bread and make fried egg sandwiches... yup, just call me Supermom!
