I'm back on the wagon at doing my menus.

Monday-Shrimp Tacos
Tuesday-Meatless Pasta
Wednesday-Steak and Beans
Thursday-Mexican Take Out--cheese enchiladas
Friday-Chicken rolls ups with cream cheese and bacon
Saturday-Sukiyaki
Sunday-your choice of Sandwiches from Ann's Plum. 30 years ago,I sat in the restaurant writing down the ingredients in their sandwiches. I'll let everyone pick what they want me to make. I just looked it up and they are still there but changed the name to The Plum.

Here's a sample
Peanut butter, walnuts, raisins, drizzled with honey on toast
Ham, turkey, green peppers, bacon, Swiss cheese on rye bread
Egg salad, bacon, fresh spinach, tomato on a croissant
My favorite is Turkey, Swiss cheese, bacon, tomato, avocado, fresh sprouts with mayo on a pita
One sandwich had chicken with sliced oranges on it.

Sandwiches sound very good Diedra

This week was/is (not what I had planned on my blog)
Monday: chicken pot pie
Tuesday: egg rolls, rice and general tao chicken
Wednesday: Leftovers for me, spaghetti for dh
Thursday: Leftovers for dh, toast for me (feeling under the weather)
Friday: Ham and mashed potatoes

So happy to see this thread this morning and to know that I'm not alone in my menu planning. Even if I don't follow my plans to a T, I feel I'm better organized and feel better than when I frequently eat out. I'm a single-person household, so I cut recipes in half and uses leftovers for the next day's lunch, so menu planning is critical.

Love the sandwich ideas, especially the turkey. Years ago, we had a favorite neighborhood coffee shop that had one called the Kitchen Sink. Starts out like BLT on whole grain bread -- bacon, tomato, shredded lettuce, and mayo, but add sliced onions, guacamole and sprouts. The shop changed hands and the new owners dropped it from the menu. :-(

Here's how my dinner menu plans went this week:
Sunday: turkey chili with cornbread and cole slaw
Monday: sloppy Joe's, roasted potatoes, and leftover slaw
Tuesday: the last of the turkey chili over macaroni with a salad
Weds.: Meatloaf with mashed potatoes, with salad and a veg.
Thurs.: dinner out with friends
Friday: homemade pepperoni, green pepper, and onlon pizza and a salad
Saturday: Hmmmm ... need to figure that one out. Just glanced at my planner and left that space blank.

We've been doing a lot of eating out this week or fending for yourself. :oops: I need to get my ish together and make a meal plan. I had a small one and then my hamburger went bad in the fridge and I went to make fettuccine and didn't have one ingredient, not my week apparently. I also bought flank steak but i'm not 100% sure on how to cook it. I was thinking fajitas, any tips? What else do you use flank steak for?

I love flank steak. It is a lean piece of meat. If you cook it well done it can be tough. I cook it medium rare like a steak. Use your favorite spices. Will make excellent fajitas. I’ve sliced leftovers very thin and used it in a salad or made French dip sandwiches.

I also don’t like planning menus but also feel lost if I don’t ... LOL

Over the past weekend, we were visiting my dad and stepmom and we had Thanksgiving dinner together! Yum! That was Saturday. Sunday was leftover turkey sandwiches. Last night, we were home and I threw together grilled cheese sandwiches and tomato soup. Tonight is beans and weenies. Wednesday will be simple again .... but I’m not sure what. I’m for more soup and sandwiches.

Then there’s Thursday! Turkey Day!! My sister and DNiece25 are coming.

Monday-was my day to make something I really like. Was not in the mood for anything, LC1 suggested popcorn. lol I thought it was a great idea. Dh decided we should have hot dogs and beans, I think he was afraid we really would have just popcorn.
Tuesday-Hamburger Soup or Cheeseburger Soup
Wednesday-Subs
Thursday- I am not making the Turkey cake since there is a recall on Jenni0 ground turkey. Bacon wrapped filet mignon, baked potatoes, stuffed mushrooms and Apple pie lasagna.
Friday-Crab Pasta Salad
Saturday-Fish
Sunday-Thanksgiving Turchikham, sweet potatoes, mashed potatoes with spinach, make ahead gravy, french bread and pecan pie. Probably a Banoffee pie if I have the energy.

Wednesday - Breakfast for dinner

Friday - errands and eating out

How do you make your Stir Fry.

I use thinly sliced steak or chicken then cook sliced carrots, onions, mushrooms, broccoli, peppers and some scrabbled eggs. I cook each in the same pan but separately. Then stir them together at the end with soy sauce and serve over rice.

I cook macaroni pasta and set aside. Then I cook onions (well not anymore with low-fodmap), celery and bell Peppers in some oïl. Add some cooked chicken or ground beef, stir with the pasta and add soy sauce.

Sunday's menu has changed to Prime Rib with stuffed mushrooms.
