i have not made a menu for this first week in February. I’ll be back.
Sunday- Country Pasta
Monday- Mini Shepherd's Pies
Tuesday- Veggie Soup
Wednesday- DH's birthday
Thursday- Chicken and Green Bean Stir Fry
Friday- Spaghetti and meatballs
Saturday- Blue & Gold for Eli
Sunday- Burgers and Hotdogs
Still a work in progress.
Monday - haven't decided yet
Tuesday - Lasagna
Wednesday - soup + grilled cheese
Thursday - spaghetti
I just dug through and cleaned out my freezers.
Dinners for the next short while will be what has been lurking in the freezers and to try and use it up.
I am either all about planning a menu or … don't do any planning and hate it and wish I did! LOL I go back and forth. Sigh …
Tonight is Chocolate Chili. That's all I know.
Friday night I made fried Spam sprinkled with brow sugar and pineapple. I had green beans on the side.
Saturday LC22 and I made Cheeseburger Soup.
Tonight we will fix BBQ spare ribs with coleslaw. Cooked the ribs in the Instant Pot last night so it’s just heat and serve.

Super Sunday - if we are home I will cook somewhat of an elaborate meal - tonight I did a roast chicken

Tuesday-Swedish Pancakes and maple sausages
Wednesday-Homemade Spaghetti Sauce from my aunts recipe--uses Italian Sausage, Meatballs, and pork.
Thursday-DD wanted Tamales and I'll make a Bean Salad (will have to find a recipe for the salad)
Sunday- Ham steaks and sweet potatoes with green beans
Here's my Mongolian Beef recipe I use. I add some pea pods and baby corn and use any leftover veggies in the fridge. No wok for me but I use a large skillet. Sometime I cook the rice with shredded carrots just to add some more veggies.
Diedra, you remind me that I have hamsteaks in the freezer. I will pull those out and do hamsteaks, grilled pineapple and green beans for dinner. Yum.

Monday - Béchamel sauce with eggs for dh, toast with cheese for me
Tuesday - Chinese macaroni with egg-rolls
Wednesday - sausage and rice casserole (yikes it's tonight and forgot to defrost it)
Thursday - forgot but it's on my list at home
Friday - ?
Sunday--pizza and Salad
Monday--copycat Chick Fil A Sandwiches and Fries
Wednesday--Roasted Pork loin and rice pilaf
Thursday---Veal,Pamesan and Spghetti, Salad, garlic toast and chocolate cream pie
Saturday---Chicken Noodle Soup
Change of plans for tonight. Dh went to a golf meeting (which was a bust since the person who called the meeting was not there to tell them what it was about) so DD and I fixed Potato Skins for dinner. Next we'll have some of the cake I made today. Chocolate cake sliced into three layers with cheesecake in-between each, some almond paste layer on top and then frosted with fudge. No calories whatsoever.
I love those calorie free cakes, Mmmmm.
Sounds like a great dinner.
This Week (feb 18):
Monday - was chicken-rice casserole
Tuesday - ham/veggie quiche
wednesday - veal sausages and rice
thursday - probably spaghetti (or maybe grilled cheese). I'll let dh chose.
Monday-Crispy Shrimp Pasta (except it was crispy since I used precooked shrimp instead of frying raw ones)
Tuesday-Hash Browns and Eggs (dh was the only one with eggs and he cooked them himself)
Wednesday- Pork Roast, mashed potatoes and cooked carrots
Thursday-This is DD's day to pick. She wanted Culver's but it's going to be sushi and maybe ice cream from culver's. Dh just called he is picking up the sushi and then fried chicken for himself. I told him he'd better eat that in the car since it's not gluten free and it wouldn't be nice to eat that in front of us.I do miss good fried chicken since going gluten free. I have some excellent recipe for it but it's still not the same.
Friday-White Chicken Chili is on the list but it might get moved to this weekend
Saturday-Will depend on LC22. If she comes she will decide what to make these two days
Hubby is gone this coming week so I'm going to try some new carb free dishes. I'll work on that and be back on Sunday with my menu. Time to ponder!!
