No real plan... as it goes with what's in the freezer.

Tonight I have a frozen chicken gratin (ready made). . Might make a rice/chicken casserole for tommorow night with leftover chicken and rice.

Monday-French Onion Sloppy Joes and Homemade Coleslaw (Sloppy Joes are renamed Sloppy Jacks because they are beef gravy with hamburger and onions). Very Good
Tuesday-Will I fixed something but cant remember right now. Tired.
Wednesday-Mexican Take Out
Thursday-Pizza
Friday-Cluver's Hamburgers and ice cream
Saturday-Steak, stuffed mushrooms and frozen veggie mix.

Thursday-Chicken Madeira with mashed potatoes and Asparagus
Friday-Grilled Fish with Sweat & Spicy Noodles
Saturday-White Chicken Chili
Sunday-Steak and fried mushrooms

This is how I keep track of my menu on the side of the refrigerator. I use a wet erase pen to write out what I need on the shopping list. Then the menu is next to it with notes on items to check to see if we have them or if they are fresh. My family is use to my writing and my creative spelling. lol

Would you share your recipe?
Oh, it's so easy, it's embarrassing!

  • Spray the slow cooker crock. Slice an onion and put in the pot.
  • Cut a pork roast into bite-sized pieces. Actually, I usually have DH do it. LOL
  • Pour a jar of salsa verde (green salsa) over the meat.
  • Cover and cook on low for about 8 hours or till meat is tender.

We are eating low-carb so don't usually have tortillas, rice or beans, but they, of course, would be great.

I like to put the chili verde over chopped iceberg lettuce, and top with sour cream and grated Mexican cheese.

Please let me know if you try it and like it or not ... be honest!

I love using the slow cooker, since when it's time to fix dinner in the evening, I've often run out of steam. It's wonderful to have dinner ready and waiting. Otherwise, I try to prep everything I can for our dinner in the morning, so there's not much to do in the evening.
