Wow...that certainly got my attention...something you'd expect as a challenge on Top Chef! Looks good though.
Family Fun magazine did something simliar I did once. But you made mini meatloafs in a muffin pans then topped w/ the mashed potatoes. These look good.
These look really good... I think they would be perfect for kids birthday parties and for Halloween (maybe add orange food coloring to the mashed potatoes). Just added this into my receipe collection... Thanks!

That's interesting however that would be one cupcake my kids would walk away from... neither like broccoli...
