I've been letting menu planning slip a bit the last few weeks. I don't seem to be inspired. I've made several soups though. Getting a fresh start for October.

October 2 – 8
  • Monday ~ Grilled chicken breasts, salad
  • Tuesday ~ Left over tri-tip, salad
  • Wednesday ~ Leftover chicken breasts with South African Bobotie (new recipe)
  • Thursday (DH cataract surgery) ~ TBD
  • Friday ~ Clam chowder
  • Saturday ~ Swiss Dip
  • Sunday (DH cooks) ~ TBD

Happy October! This is my PLAN for the week. Whether or not it holds will be an entirely different story.

Oct. 1 - 8, 2023
Sunday:
Crock-Pot Crazy Pineapple Chili, coleslaw, corn bread (Will prob. be regular chili on the stovetop, since I was missing a couple of ingredients and couldn't start it this morning.) https://twohealthykitchens.com/crock-pot-crazy-pineapple-chili/
Monday: pork chop, baked apples, baked sweet potato w/brown sugar, coleslaw
Tuesday: grilled chicken, chopped salad, grilled veggie skewer
Wednesday: Souper Supper -- tomato celery soup, grilled cheese, assorted pickles
Thursday: pan fried or grilled fish, roasted potatoes, coleslaw
Friday: pizza, tossed salad
Saturday: steakhouse dinner out with DBiL's gf [late DH's brother's gf, none of my DSis's DH's have a gf, as far as I know, lol!) There's a local steakhouse that she's heard a lot about over the years with DBIL, and she specifically asked if we could have dinner there.
Sunday: late lunch / early dinner out with DBIL's gf and DD before Bonnie Raitt concert.

3-Tuesday Pizza
4-Wednesday Freezer spaghetti sauce and CostCos GF tortellini
5-Thursday Hot Dog, Homemade Baked Beans, French Fries, veggie tray
6-Friday Homemade Chili and Corn Bread
7-Saturday Rib Eyes on the grill, baked potatoes and Roasted Broccoli
8-Sunday Leftover steak stir fry
9-Monday-out to eat all day
10-Tuesday out to eat all day
11-Wednesday out to eat all day
12-Thursday breakfast at the hotel, dinner hamburgers at home if the windows are done

I am in much the same boat. I have lost my mojo a little. Time to get back to meal planning.

Don’t feel bad ladies seems I can’t ever get started with meal planning. But this week I will give it a try!

Sunday- Husband brought home Applebees appitizer platters.
Monday- Meatloaf, scallop potatoes, broccoli
Tuesday- Chicken stir fry and wild rice
Wednesday- Pork chops, mixed vegetables, mashed sweet potatoes
Thursday- Will see what needs used up in refrig and freezer
Friday- Moms beef and dumplings (freezer meal)
Saturday- Sunday school picnic

Monday:
large chef's salad or maybe a wedge salad -- I ate and drank way too much this weekend; I need to get my body back on track!!!!
Tuesday: chopped salad, oven-roasted chicken, mixed rice, green beans
Wednesday: Souper Supper -- carrot ginger soup, salad
Thursday: salmon, roasted potatoes, coleslaw
Friday: pizza, tossed salad
Saturday: leaving this open and dinner will depend on what leftovers may need to be used up, OR possibly dinner with DD
Sunday: clean out the fridge, something with what remains and needs to be used (leaving on a week-long girls trip early, early, early Monday morning.

I've got to get back on track after vacation and eating out all the time. It's going to be a busy week, so I need to have a plan of attack and get groceries today. Lunch will be leftovers from the previous night's dinner.

Oct. 22 - 29, 2023
Sunday:
chili, corn muffins, coleslaw
Monday: chicken a'la king with peas and carrots, cranberry sauce (cook chicken in crock pot)
Tuesday: baked mostaccoli, chili mac topped w/ melted mexican cheese blend, chopped salad -- need to finish off the leftover chili
Wednesday: Souper Supper -- split pea soup, parmesan crostini, mac salad
Thursday: fish, baked potato, coleslaw
Friday: pizza, tossed salad
Saturday: spaghetti w/ meatballs, salad
Sunday: meatloaf, mashed potatoes, vegetable, salad

I also haven’t gotten back on track with meal planning.
I have salmon patties, spaghetti, ALDI’s frozen orange chicken, and brats in the the freezer/frig/pantry to use this week.

I have leftover cooked peas, carrots, and spaghetti squash.

That chili and cornbread and coleslaw sounds like a meal I want to include next week!! :)

Missed last week but I’ll try again this week!

Sunday: quick quiche with ham, Brownies for dessert. Maybe a salad if husband wants. Trying to use up a dozen eggs before they outdated. Deviled eggs for snacks this week.
Monday: Steak, potato salad, baked beans(freezer meal side)
Tuesday: last of the ham, potato salad (if any) green salad other wise
Wednesday: chicken stir fry and rice
Thursday: stuffed cabbage (freezer meal)
Friday: dinner out
Saturday: will rummage through frig and freezer to see what needs used up.

  • Saturday ~ Low-carb broccoli, ham and mozzarella casserole or meatballs (Swedish or French Onion)
  • Sunday (Merwin cooks) ~ Pizza?

Monday: leftover meatloaf, stuffed acorn squash, salad
Tuesday: sloppy joes, roasted potato wedges, coleslaw (Something easy, in case we have late Halloween trick-or-treaters. Some years we have 20-30, other years 1-2 (or none). With the weather predicted, I'm thinking we'll have few to none, but you never know.)
Wednesday: Souper Supper -- pumpkin soup, roasted brussels sprouts w/ bacon, salad
Thursday: fish, potato wedges, coleslaw
Friday: spaghetti w/meatballs, salad, garlic rolls
Saturday: chicken in crock pot w/ apples and cranberries, rice, salad
Sunday: turkey breast, stuffing, green beans, salad

Monday- bacon cheese burgers, homemade fries and coleslaw

Friday- grilled cheese and tomato soup
Saturday- leftovers
