  • Wednesday ~ Sausalito sandwiches
  • Thursday ~ Dinner out (Emory’s - I had a small spinach salad.)
  • Friday ~ Salmon, salad
  • Saturday ~ Grilled burgers with caramelized onions
  • Sunday ~ Chicken (leftover)-cabbage stir-fry

Jampss ~ You're making me want to make pasta salad! That's a cute video. I use salad dressings, too, when I make my pasta salad. My favorite is Johnny's Jamaika Mistake.

I'd like to try the pesto pasta but I don't see the actual recipe. Any idea where to find it? Thanks!

All this, if I can muster the energy needed to cook.

Monday - Honey mustard chicken (from a jar)
Tuesday - Pepper steak, mashed potato and peas
Wednesday - Curried sausages, mashed potato, naan bread
Thursday - Savory mince on toast
Friday - Chicken with mushrooms and spinach and a parmessan sauce
Weekend - leek and bacon cob loaf ....leftovers/clean out the fridge

I am so intrested in looking at the menu plans over the next few months. I really need new ideas for Summer meals for our Summer here. I get very stuck for ideas.

-- burgers (from freezer) on the grill, grilled potatoes, broccoli salad
Monday -- grilled chicken breast (from freezer), veggie skewers, salad
Tuesday -- olive bread or tomato bread on leftover rolls, salad (book club luncheon, so something light for
dinner)​
Wednesday -- tomato celery soup, grilled cheese
Thursday -- bacon, brie, and fig jam w/ balsamic reduction on sourdough, spring salad mix (sandwich is a
rough replication of one I had at a favorite bar/grill in Ft. Myers area)​
Friday -- pizza, salad
Saturday -- steak (from freezer) on grill, baked potato, salad

I just picked up some brie just for this sandwich! I just didn’t know why I was buying it yesterday. I have to see if I have any fig jam left. Thanks

22-Rib Eye hamburgers-Dh came home from Costco with these. They are tiny, just under 3 ounces/85 grams each. Wish I had some little slider gluten free buns. Homemade potato salad.

The restaurant serves it on a baguette, but I'm going to try it as a panini this time.

I love to try to copy-cat recipes we like at restaurants. One of our favorite ones we call Sausalito sandwiches because we had it in Sausalito. It's great for summer with leftover chicken or turkey. The original was turkey, but we rarely have turkey and always have chicken. It's very simple. Ciabatta roll, garlic-buttered and toasted under the broiler, mayo, roasted red pepper and chicken/turkey. The roasted red pepper "makes it". I usually like to do my own roasted red peppers but the ones you buy at the store work fine also. I'm sure the one we had in Sausalito was made on sourdough bread though.

I find it really tough to menu plan....

Today - london broil on the grill with corn and a choice of potato salad, cole slaw or leftover salad from last night
tomorrow - probably shrimp with orzo pasta as it's meatless Monday; might try one of those over night bread recipes
Tuesday - going into the city and not sure when I'll be home so leftovers
Wednesday - maybe a stir fry and some dumplings from Trader Joe's
Thursday - usually Panera before we pick up Buffy at day care
Friday - OMG - I'm stuck! Tacos with rice?
Saturday and Sunday - going to see DS and DDIL in the Hamptons - one night I'm sure will be lobster:)
Memorial Day - if it's a holiday it's not meatless Monday so, if we get home and it's not raining will do hamburgers and hot dogs with beans for DH
Next Tuesday and Wednesday - we have baseball game tickets for both nights. Tuesday is our anniversary and Wednesday is Bark in the Park when we take our dogs to the game
Thursday - should be having an early dinner with by friend Inge so DH is on his own
Friday again........

I look at menu planing as a component of my grocery shopping. I look at what I may want to eat, what I have on hand in the pantry, refrig, or freezer, and what I'll need to add to my shopping list. I'll also take a look at the grocery ads for the week to see what's on sale that looks good and work that into my rotation. In the long run, I have a plan. At the very least, I have ingredients on hand and can avoid the fast food drive thru.

I don't make recipes using bleu cheese or brie due to a penicillian allergy. Is anyone aware of other cheeses that might work well as a replacement? I'm sure the flavor can't be replaced but what about the texture?

Which reminds me, we have nut allergies here. I have bought imitation nut extracts to use in baking and cooking. When I made the Orange Orzo salad the other night, I replaced the almonds with unsalted sunflower seeds and then added a teaspoon of imitation almond extract to the dressing. That seemed to work well enough.
