  • Monday ~ Chicken breasts, salad
    • Prep Asian chicken and pancakes (see if I already have pancakes)
  • Tuesday ~ Pancakes, eggs, bacon
  • Wednesday ~ Asian chicken salad wraps (freeze some for camping trip)
  • Thursday ~ Pork chops, salad
  • Friday ~ Shrimp, salad
  • Saturday ~ Emelie’s cheesy chicken pasta
  • Sunday ~ TBD
  • Other cooking:
    • Make treats (cookies or brownies) for camping trip

Tonight was leftovers ... eggplant parm and creamy noodle Polish sausage bake.
Tomorrow is alfredo cheese tortellini with ground sausage and ... birthday cake! (DH's b-day)
The rest of the week, I have turkey bean stew, salmon patties, and cheesy broccoli rice with Polish sausage.

I'm going to try to join in this month. :) We are eating from the freezer this week.

Monday - Lentil Soup and salad
Tuesday - Meatloaf Muffins (meatloaf portioned out in muffin tin)
Wednesday - Pasta with spinach and Italian sausage
Thursday - Bratwurst with onion, peppers and mushrooms.
Friday - Fish fillet and salad
Weekend - leftovers

In front of my computer
LC1 and I did some meal planning today. She has a huge chicken to roast so she needed leftover meals for that. Then she is going to cook a vension or beef roast so we were looking for how to prepare it (she is looking for something different since they eat this often) and then leftover ideas. We both are going to make those Parmesan encrust potatoes recipe we saw on FB (Cooking with Ayeh) have made them twice. I might have a meal out of them with different dips and a big salad. So she has a week of items plus her shopping list. I need to get a menu lined up. We decided on Mondays to do our meal planning for the week. Will be fun to do it together.

This is my new fav way to make meatloaf! Doesn't take as long. I use ground turkey, or 1/2 turkey and 1/2 beef. Sometimes ... 1/3 turkey, 1/3 beef, and 1/3 ground sausage. :)

What about this takes less time? I would think it would take less time to just form a whole loaf. Or are you talking about the baking time? Just curious. I like to bake meatloaf in red peppers.

Cold here this week so the menu is

Monday - Sausages with baked beans, eggs and toast
Tuesday - Chorizo and pork pasta in tomato sauce and garlic bread
Wednesday - Chicken tacos with sour cream, lettuce, avocado, carrot and cheese
Thursday - Meatpie with potato and peas
Friday - Chicken cordon bleu meatloaf with veggies
Weekend - leftovers/clean out the fridge

Can cut up the roast into small pieces. toss into crock pot with broth and seasonings, add in slurry to thicken into gravy. When meat is tender add noodles and veggies.
Cook roast in crockpot until tender enough to shred for RB sandwiches or to use in tacos or quesadillas.

Ahoresesoul ~ Have you tried the Mississippi pot roast? DH and I love it.

I'm changing up my menu plan a bit this week, since I realized that Friday is Cinco de Mayo. I'm going to try a new recipe for a Mexican crocpot casserole.

That sounds delicious! Have you made it before? Can you share a recipe?
I have made this many times, it has just found it's way back to our rotation.

Measurements are in Australian so you will need to convert.

750grams chicken mince (ground chicken)
1 small onion grated
1 1/2 cups bread crumbs
4 slices ham
4 slices Swiss cheese.

Combine chicken, grated onion and half the breadcrumbs in a bowl, season with salt and pepper.
Place 1/2 the mix in a meat loaf pan.
Layer the ham and Swiss cheese to cover the chicken and top with the other half of the mince. Top with the rest of the breadcrumbs.
Bake in a 180C oven for 45 minutes or until cooked through.
We serve with mashed potato and green beans, peas or asparagus. Nice served with a mild mustard.
