We have turkey farms around us. They are really busy right now getting our turkeys ready for thanksgiving.

Do you buy a fresh turkey? I've wanted to do that. It's such a pain to thaw a big bird.

If I'm making a turducken I usually buy a fresh turkey, debone it, lay it out flat and freeze it. It does not take long to thaw. This way I can have all the poultry done before the mad rush at Thanksgiving.
