That's similar to how my GM would do her green beans, peas, and lima beans, though the times may have been shorter. But always from the blanching pot into an ice bath to stop the cooking. then dry and bag for the freezer.I am planning on blanching some swedes i have in the garden....I read boil for 3 min then put veg in cold water with ice then dry off.
The various canning and processing methods used across the world causes a lot of controversy with regard to "B" in foods canned using what some consider "unproven" methods. Not everyone follows USDA practices. And, for many people across the world access to a modern pressure canner is out of the question, meaning many still use old world methods. So, to keep peace, that's one on their "banned word" list.I blanch sweet corn to freeze. We are not a fan of frozen green beans blanched or not. We could not tell the difference when I froze them both ways. I freeze broccoli not blanched and it’s been fine.
Lori, Why can’t you use the “B” word on the canning forum? Profanity, etc I get but why is that prohibited?
