Here we are- Ready for Fall- Or what I like to call, "Casserole and Soup Season!" Our recipe for the week is my very favorite find from last year. It is "Stuffed Green Pepper Casserole" provided by teachermomof2. It has become my go to recipe. So easy, so good.

Stuffed Green Pepper Casserole

Ingredients:
Serves : 4 Prep. Time : 1:15

1 Lb. ground beef OR turkey
2 Tbls. chopped onion
1/3 cup chopped green bell pepper
1 cup cooked rice
1 tsp. salt
1/4 tsp. garlic powder
1 Tbsp. Worchestershire Sauce
1/4 tsp. dried basil
Fresh Ground Black Pepper
(2) 8 oz. cans tomato sauce (you can try 1- 15 oz. can Contadina Zesty Tomato Sauce)
3 med. green bell peppers - seeded, sliced lengthwise
1 cup shredded cheddar cheese (1/2 cup added it to the meat mixture with the rice , then topped it with 1/2 cup of cheddar during the last 5 minutes.)

Directions:
-Brown meat, onion, and chopped peppers in skillet, stirring occasionally.
-Drain off fat.
-Stir in rice, salt, garlic salt, worchestershire sauce, basil, ground pepper, and 1 can of tomato sauce( or 1/2 can of zesty tomato sauce)and 1/2 cup cheddar cheese; heat through.
-Spray a 9" X 9" X 3" baking pan with cooking spray.
-Line with 1/2 the sliced peppers.
-Pour half of meat mixture over peppers.
-Layer remaining sliced peppers on top of meat mixture.
-Pour remaining meat mixture on top.
-Pour remaining tomato sauce over meat mixture.
-Cover with foil and bake in a 350 degree oven for 45 minutes.
-Uncover and bake an additional 10 minutes.
-Sprinkle with cheddar cheese and bake an additional 5 minutes.

This has become a favorite at my work, too. And it is very easy to change to fit your taste. For example, my friend uses soy sauce in place of the worchestershire sauce and adds stir fried cabbage to the meat mix.
For a Spanish flavor, use a mexican spice packet in place of the spices, and switch to red peppers.

You know I printed it out last year and haven't done it yet?? I will try it next time I buy ground beef. Thanks teachermomof2 and Annie.

Oh, that sounds delicious! And, if you used red, green and yellow peppers, so very fall looking! I'm going to have to try that...sounds like a good one to entertain with as well!

I agree, using different colored peppers would make it look very festive.

Yes! This one is a keeper for sure. Since I got this recipe last year from teachermomof2, I have made it several times. And the left overs are yummy! Reheated, it makes a perfect lunch.
