This week's recipe is provided by Ahoresoul! It is Senate Bean Soup. I love the story behind this- I can imagine having this at the US Capital Building. It sounds so dignatary doesn't it!


My aunt found this recipe in the newspaper in the early 1960s. I'm lazy so I just buy canned beans and never have pureed any of it. I serve it with a salad and cornbread. Anytime I'm visiting Washington, DC I try to stop at the US Capital Building for this soup in their Dinning Room (note, this is not the visitors restaurant).

Senate Bean Soup

1 1/2 cup dried white beans
1 smoked ham hock
1 medium potato, finely diced
1 onion, diced
1/2 cup diced celery
1 clove garlic, minced
Salt and Pepper
Parsley

Soak beans overnight in 1 quart water. For a quick soak bring beans and water to a boil. Boil 2 minutes, cover beans. Let stand 1 hour and drain saving liquid. Measure liquid and add enough water to make 2 quarts. Place beans, liquid and the ham hock into a pan. Cover and simmer 2 hours. Add potato, onions, celery and garlic. Simmer 1 hour. Pull meat off the ham hock and add back into the soup. Remove 1 cup beans and some liquid, puree in blender and add back to soup. Serves 6
