Pecan Pie

Pecan pie is my all time favorite. I do not make it (hopefully) but once or twice a year. I can eat the whole pie and I'm not fond of sharing it. lol I've tried all kinds of recipes but the one on the bottle of Karo Syrup is the best. I'm sure this would work for any type of nut.

Pecan Pie
One unbaked pie crust for the pan
3 eggs, slightly beaten
1 cup Karo Syrup, light or dark
1 cup sugar
2 tablespoons butter, melted
1 teaspoon vanilla
1 1/2 cups pecans (whole or chopped, chopped is easier to cut, or mix the two)

Stir eggs, corn syrup, sugar, butter and vanilla until well blended. Stir in pecans. pour into pastry shell. Bake in 350F oven for 50 to 55 minutes or until knife inserted halfway between the center and edge comes out clean.

Frosted Pumpkin Pie

Frosted Pumpkin Pie

Buy or make your favorite pumpkin pie. Cool pie until not the least bit warm if you bake it yourself or use a frozen one.

One small container of cool whip or whip up 2 cups whipped cream until stiff.
Blend one 8 oz container of softened cream cheese with 1 cup powdered sugar until blended very well. Fold in the cool whip or whipped cream. Frost the pumpkin pie with mixture.

This turns a plain ole pumpkin pie into something very special.

Raspberry Cranberry Pie

Raspberry Cranberry Pie

1 pie crust in pan (uncooked)--I use a deep dish pan

Dump into crust:
6 oz raspberries (fresh or frozen) (sometimes I do not use them, could be strawberries if you'd rather, or one or two chopped up peeled apples)
2-12 oz bags of cranberries (fresh or frozen) (I've sometime just used one bag if I'm not using a deep dish pie pan)

1 1/2 cups sugar
Rind from 2 oranges
2 teaspoons vanilla
3 eggs, slightly beaten
1/4 cup Karo Syrup
Couple dashes cloves and nutmeg
Mix together and pour over fruit in pie crust

I bake this at the same time I do the pecan pie. I watch towards the end of 45 minutes to see if it needs to come out early than the pecan pie.
