I thought I'd go ahead and get the February recipe up so you could find a spot to work it into your menu plans!
SPAGHETTI CASSEROLE
1 cup onion chopped
1 cup green pepper chopped
1 TBSP buter
28 oz can of tomatoes (undrained)
4 oz can of mushrooms (drained)
3.8 oz can sliced black olives (drained)
2 tsp dried oregano
1 lb ground beef (browned and drained)
12 oz spaghetti (cooked and drained
2 cup cheddar cheese shredded
10 3/4 oz can condensed cream of mushroom soup
1/4 cup water
1/4 cup grated parmesan cheese
In a large skillet saute onion and green pepper in butter until tender. Add tomatoes, mushrooms, olives and oregano. add ground beef and simmer uncovered for ten minutes. Place half the spaghetti in a greased 13 x 9 baking dish. Top with half of the mixture. Sprinkle with one cup of cheddar cheese. Repeat layers. Combine soup and water, stir until smooth. Pour over casserole. Sprinkle with Parmesan cheese. Bake uncovered at 350 degrees for 30-50 minutes or until heated through. Makes 12 servings.
This seems like a good dish for a Sunday or an evening meal during the holidays. Add a vegetable or salad and bread for a full meal!
