Since we begin a new month tomorrow, thought I'd start a new thread.

-- away
Monday -- travel day, grab dinner on the way home from MDW (arrival time was supposed to be 6:30 PM)
Tuesday -- spaghetti, salad
Wednesday -- Souper Supper with tomato celery soup, grilled cheese, and salad
Thursday -- lemon chicken over rice, salad, peas
Friday -- pork chops from the freezer, appleauce, oven roasted potatoes, salad or coleslaw
Saturday -- dinner with group
Sunday -- pork tenderloin, sweet potato, coleslaw

February is still Summer here so still enjoying lighter meals

Sunday -- kids for dinner
Monday -- popcorn chicken, corn and potato bake
Tuesday -- pork steaks with vegetables and pepper gravy
Wednesday -- French onion Chicken drumsticks, sour cream and potato
Thursday -- Dinner out for me, DH will cook something
Friday -- chicken tenders on tortillas with salad, salsa and sour cream
Saturday -- something quick after the farm
Sunday -- apple jaffles with ice cream

Tonight ... I am making an Aldi's GF cornbread mix that I am putting into the muffin tins stuffed with some fried up turkey hot dog pieces.

Next week, I was looking on Pinterest for some Bento boxes of Mediterranean food items just to have some grab and go fun things for veggies options.

Week 2 of the new routine and I have to remember that DH is cooking twice a week now instead of once.

Sunday -- croissants with ham, cheese and tomato
Monday -- sausages with mac and cheese
Tuesday -- fish, chips and veggies
Wednesday -- Zucchini and corn frittata
Thursday -- Mexican lasagne
Friday --cold meat and salad
Saturday -- something quick after the farm

Monday -- country ribs, sweet potato, coleslaw
Tuesday -- (open; may have to run to Michigan to deal with banking issue with mom)
Wednesday -- Souper Supper -- chicken noodle soup, salad
Thursday --chicken breast with rice, oven-roasted brussels sprouts, salad
Friday -- pork tenderloin, oven roasted potatoes, coleslaw
Saturday -- pizza, salad

I have been trying a lot of pre-made food from Costco that is gluten free. Some will be put on the menu in the future. Made the mistake to browse 'Costco Gluten Free Finds' group on FB. They post photos of what they found, where in the store (frozen, Refrig or shelf) and give it a review. We did find a wonderful GF pizza that has a crispy crust. We have had it twice this week. Hard to find a good pre-made pizza that is GF.

So far we liked:
BFree Pita Bread (S)
Sabatasso's Four Cheese Pizza (F)
Hook Line and Savor Everything Crusted Cod (F)
Canyon Bakehouse Multigrain Bread (S)
Forest Farms Crispy Wings (F)

Tomorrow we try Vietnamese Pho (S) which is like a large Ramen noodle bowl.

Still have not found GF Cheese Tortelloni (R) which everyone who tries it seems to love. It also runs out fast so must be something restaurants are buying too.

What you have had that was GF and tasted great?

If you ever get into the Chicagoland area, there is a great Italian deli/imports grocery in the far south suburbs, just a couple of miles north of I-80/Harlem Ave. They have a wonderful selection of pastas, sauces, etc., and make wonderful sub sandwiches that will easily feel 3-4, and lots of pre-made entrees. They also carry a wide variety of GF pasta. I don't know if they ship or not (they do cater), but it might be worth investigating if you're in the area. Doing groceries today, so I did my meal plan for next week.

Feb. 19 - 25, 2023
Sunday
marinated pork roast, baked sweet potato, coleslaw, baked apple leftovers from Saturday dinner out
Monday sloppy joes, oven roasted potato wedges, coleslaw marinated pork roast, baked sweet potato, coleslaw, baked apple
Tuesday spaghetti w/ meatballs, salad, garlic bread tacos (got a great deal on flour tortillas, guac, and salsa)
Wednesday – Ash Wednesday / Bible study -- tomato soup
Thursday – apple cranberry chicken in crockpot, rice or stuffing, salad
Friday – pizza, salad
Saturday – (tentative) meatloaf, mashed potatoes, salad, green beans​

I need to work on getting back on the menu train. DH has been very helpful lately in having something started when I get home from work, but I need to do better with having things thawed and ready to cook when I get home or for him to start. This will end soon because yard mowing season will start. He will be mowing after he gets off from teaching school.

Monday - Spaghetti and Meat Sauce, Salad
Tuesday - Vegetable Beef Soup, Cornbread
Wednesday - Leftovers, Garlic Cheese Biscuits
Thursday - Fried Fish, Baked Potatoes, Salad
Friday - TBD (sometimes there's catered food leftover from lunch at work that CW and I split and bring home - large quantities at times or enough to repurpose into a meal - will see how the week goes before planning all week)
Saturday - Ladies' honorary supper at church
Sunday - Eat Out
