Sunday
-- dinner out with DD & DSIL for b-day
Monday -- Burger on grill, roasted potatoes -- quick, while prepping for party
Tuesday -- July 4th get-together -- chicken (from local caterer), baked beans, potato salad, rolls, relish tray, bluebery & raspberry fluff, tripple-berry pie, cookies. Brought by guests -- mixed fruit, coleslaw, pasta salad, veggie tray, taco chips and salsa, potato chips and dip, cookies.
Wednesday -- leftovers -- chicken, baked beans, asst. salads
Thursday -- chicken and pasta casserole (with leftover chicken), salad (from lettuce in the deck planters), other sides, as desired
Friday -- BBQ chicken pizza, salad
Saturday -- Burgers or hot dogs, side salads, baked beans

Debbie, I've spent 3 years cooking outdoors or eating out since losing our home and living in a camper. I longed for the day we would be in our new home so that we could have "real" food. Of course murphy laughs at my plans but I try anyway. The counter tops, cabinet doors and fronts as well as the sink installation was supposed to be completed today. The cabinet doors, drawer fronts and handles were all put on but the counter top guys showed up after lunch and out of the three tops they installed they broke two of them so I'm sure this means another week long delay on the counters and sink which severely messes up meal preparations and plans. Those that don't get made go to the end of the list. I detest grocery shopping so by making out my menu I can shop one time (with the exception of perishables of course) and have what I need on hand.

Bet the their boss was very upset about the breakage. Wonder if there was a flaw in the counter tops. Strange that two of the broke. After the first one you would think they would be more careful.

I am giving this a try for dinner tonight. My niece made it back in June when she was home visiting. She called it like Chinese Ramen Crunch Salad.

Wednesday -- tomato soup with a BLT
Thursday -- fish on the grill, roasted potatos, coleslaw
Friday -- pizza, salad
Saturday -- steak from freezer, baked potato, salad
Sunday -- pork roast, baked sweet potato, baked apple, brussels sprouts with balsamic glaze

I have made that salad and for a meal, added chicken.
For a potluck, I do just as your recipe. But I have never sauteed the ramen.
Want to try that!

VBS this week, so Monday through Friday, we'll eat at church.

I'm wanting to think of easy peasy one pot meals .... (hard because DH is veggie lacking, picky ... whereas DS and I eat most anything).

My go-to one-pot meals are tacos with fresh toppings -- peppers, onions, tomatoes, lettuce, and shredded cheese, and spaghetti or some other pasta cooked, drained, and add marinara sauce and cover and cook until the sauce is hot, topped with either parmesan or mozzarella (or both) and served with a side salad.

Like I've said before, this is a plan and only a plan. When I look back at last week, only two nights were cooked according to what was planned. I didn't get to the grocery store, spent way too much at Menards on cleaning supplies. Instead, I winged it with leftovers and what I had on hand that needed to be used up. Here's what is planned for this week.

July 17 - 23, 2023
Monday
-- tacos or tostadas with (maybe) spanish rice (leftovers rolled into a burrito for lunch on Tuesday)
Tuesday -- chicken on the grill, rice, vegetable, salad (leftovers for chicken salad for lunch on Thursday)
Wednesday -- soup (not sure what kind) with a BLT -- book club luncheon, so will be a "light" dinner
Thursday -- baked mostaccoli with Italian sausage, salad (leftovers for lunch on Friday)
Friday -- pizza, salad
Saturday -- BBQ ribs on the grill, baked sweet potato, salad or coleslaw, baked apple
Sunday -- fruit plate with cottage cheese, raisin toast with peanut butter

Lori- Thanks for the idea of tostadas. Haven't done those for long long time.
Sometimes I will do ceviche tostadas. But traditional sound good.
I'm going to make them next week or maybe for lunches during my vacation week.
I told myself during vacation week I can not go grab food for lunch every day.
